I always love salsa, but not so exciting maybe for St. Patrick's Day. Some other ideas:

We always have a big St Pats Party at our house, with Corned Beef and Cabbage. This year, I also decided to add a Potato Bar - kind of a buffet where you can make your own mashed potato creation. I will have a big crock of mashed potatoes, and want to add a variety of toppings in bowls - I will have bacon, a variety of cheeses, and chives - but I cant think of anything else to put - I would love suggestions of creative things to provide. Thanks for your help!

My best friend had this at her wedding and it was a HUGE hit.
What about having sour cream, butter, garlic, salt/pepper/different spices set out. Maybe even an assortment of veggies. I've seen people add broccoli, so it's something to look into. This might seem weird, but I know people like to add cottage cheese, yogurt to it, chili/salsa and even mushrooms.

When I read this, the first thing that came to mind was chilli or saurkraut... wanted to provide more options so I googled and found this site... it lists a ton of topping ideas

When I've done a "potato bar" before, it's been with baked potatoes, but I could certainly see it working with mashed potatoes. :) Two things you don't have listed that are fun with a baked potato bar are chili and sour cream. If you wanted to be different, you could even have salsa. Sounds like fun! (And actually, baking a lot of potatoes might be simpler for you than making a pot of mashed potatoes...)
I would put green tinted sour cream out. That would be so cute!

Old Bay seasoning is great on potatoes. Butter. Finely diced ham. Broccoli cheddar cheese sauce.
Chili, cottage cheese, broccoli, beans. Also.....one year I had a St. Pat's party and everyone was to bring something GREEN to eat plus I did alot of green things. We had spinach pasta, split pea soup, creme de menthe cake, green jello, various salads, etc. It was FUN and interesting to see who came up w/ what.
What about some green food dye? For green potato's? Also: Black olives, queso and spinach. At least, that's what I like on Baked Potato's. That sounds fun!
At some restaurant in C-bus (can't remember which one) I had a baked potato w/ grilled peppers (red, but you could also do green) chicken and a alfredo type sauce.
It was delish. Great flavor.
