One of my Lunch Bunch friends, sbsolute favorite cake is that Pistachio Cake, fom the 1970's.. Box cake mix and instant pudding.

Do you think they would be ok as cupcakes?

What kind of fronsting went on that cake?
I just remember my mom baking it in a Bundt Pan..

I looked on allrecipes, but want to make sure it is the same recipe..

I think I am getting confused by the Watergate Salad people used to eat with the pudding anf lime jello and pinapple?

What can I do next?

OMG yes! Do it!
Yum!

I remember that cake as a kid... my Mom and Grandma used to make it. Oh gosh... I don't even know if my Mom still has the recipe.
I want some NOW!

Use a butter cream frosting. White.

Google search "watergate cake recipe" and there are many.

One of my coworkers back in the late 70s would bring a pistachio bundt cake in for potlucks . . . oooooh, my mouth is watering at the memory!

She wouldn't share the recipe :-(

Thank you for reviving that memory, and for pointing me in the direction of a recipe to try!

(and yes, I'm sure Melissa is correct - have fun with your baking!)

There is a Watergate cake and a Watergate Salad. They both use pistachio pudding. I googled Watergate cake, and I think you will find what you are looking for. It uses pistachio pudding in the cake mix and in the frosting. Now I'm going to have to try it, too! BTW, one of the links I saw listed the history of the dessert and it was funny - Jello brand came out with this during the Watergate scandals. "Cover-up frosting" and the cake has lots of nuts!

You can always add pudding mix to box cake mix to turn it into a pound cake & yes, the recipe can definitely be found not only on allrecipes, but on the side of most box cake mix as well.

Pistacio cake is definitely not the same thing as watergate salad, though they do share the green color & pudding mix in common, that's where the similarities end, lol.

As for whether or not you can turn it into cupcakes, absolutely EVERY cake mix whether homemade or from a box that I've come in contact with can be turned into a cupcake without any adverse affects whatsoever. Instead of baking for 45-50 minutes, start with 18-20 at the same temperature & go from there!

LOL, maybe it's a generational thing (I made my appearance in the early 80's), but this doesn't sound tasty to me at all. I suppose if you send me one I will give it a try and let you know :)

yes I've made them as cupcakes, just use a yellow mix and add the pudding dry to it. I use another box of thepudding and mix it w/cool whip for the frosting, or you could use creamcheese or choc frosting too
