There is a recipe book called, "Deceptionally Delicious" written by Jessica Seinfeld. It is the best thing int he world. Full of "hidden" fruit and vegetable ingredients. It is $8.19, new right now on Amazon.com.
I have a 20 month old son who has never been a good eater. Now that he is finally eating somewhat regularly, I am having a very hard time getting him to eat a variety of things. I really want to make sure he is getting enough vegetables but not having much luck getting him to eat them. So I wondered if anyone has a fruit/veggie PACKED recipe for a yummy bread or something similar where I could hide a lot of veggies/fruits in each bite. I seem to remember seeing a recipe for zucchini bread a long long time ago that had pureed spinach, squash, carrots, apples and bananas all cooked inside. I can't seem to find it or any other vegetable packed, kid-friendly foods. Any moms out there have any super healthy recipes that they would like to share?

I bought the cookbook deceptively delicious by Jerry Seinfeld's wife, and love it! There are some really great recipes in there that are packed with fruits and veggies!
yes,I second the jessica seinfield cookbook. she "hides" spinach in brownies etc.!!
I wouldn't sweat this too much - lots of kids are that way! Deceptively Delicious is a good cookbook, and I have a couple of great recipes that I could send you if you want. (It would take up a lot of room on the post, so I wanted to make sure you want them before I do it!) One recipe is for Zucchini-Carrot Muffins, and the other is for Banana Pancakes. But you should still offer fruits and veggies with every meal - eventually (maybe!) he'll eat some!
I use V8 juice a lot. I will mix it with apple juice and put it in a cup for my 17 month old. Also, any time I'm cooking something with a tomato base (e.g. chili, spaghetti sauce, etc.) I will use V8 instead of tomato sauce. The V8 is a little runnier than tomato sauce so you have to compensate for that, but otherwise it works really well!
Good luck with your picky eater! I have one too so I'm going to get the cook book everyone is talking about.
My 2 year old daughter is super picky too!
Try Jessica Seinfeld's cookbook "Deceptively Delicious" she has all kinds of recipes in there that are filled with vegetable & fruit purees. (I've seen copies of the cookbook at 1/2 Price books recently). I've tried a few of the recipes and they are pretty tasty. Another couple things I have done is to make a regular box of Kraft Mac & Cheese and stir in either sweet potato or carrot puree...doesn't change the color, and just makes the taste a little sweeter. My daughter also LOVES refried beans, so I will mix in pureed veggies with that as well and she can't seem to tell (so far I've tried summer squash and sweet potato) Good luck and I'll be checking back to see if you get any other yummy recipes I can try. :)
I've done the Sneaky Chef, but kinda found it to be a lot of work in general. My sneaky trick is to put a container of sweet potato baby food and a few scoops of chocolate ovaltine with milk. My son loves it! We call it "ice cream milk."

Jessica (?) Seinfeld just came out with a cookbook that has veggies in all kinds of foods.
I find that soups are a good way to sneak in veggies.
