Here's an idea. My husband and I are going on our first vacation in 6 years and we are looking for ways to pool extra "fun" money for the trip. He recently donated plasma for the first time and it went great. The center is near our home in a nice suburban area and was running a "special" where a new donor can make up to $330 their first month. For us, it was worth a try to do it once and now he's hooked! (And it makes him think twice about dropping $50 needlessly on something like takeout -- he is more of the mindset now of looking at things in terms of is the cost of x worth me sitting and donating plasma for an hour+ ?) I am still recovering from a recent health set-back but once I am fully healthy again I plan to give it a shot as well.
I don't know exactly what kind of education you have with the medial assisting (or in addition to that) but I know that you are probably tired even just working part time if you are also a mom and trying to take care of the house and everything, so of course being a server is probably the most obvious and easiest to find, but it might be really hard! :) You could try tutoring, either privately or at a tutor place like Sylvan or somewhere. Or tutoring ESL for people who want to practice their English. It might be hard to find, but my husband and I have both done it and it brings great money if you do it on your own, just one on one, and it's easy and fun. I also live in CA and I know the job market is cruddy right now, so good luck!

Hey I'm going to throw something in the hat that may or may not be what you're looking for but I love it. I work for a company called ChaCha! You can look them up if you want more info but basically we are a mobile question/answer service. People call or text in a question, and a guide will research the answer using the internet (from home) and send an answer back. There are many other positions - I transcribe voice messages to text and then send on to a guide. I only get paid .3 cents per question but questions can be back to back during busy times and I believe night time (which you mentioned you're looking for) is one of the busiest times. Guides earn I believe closer to .10 cents per query. If it sounds interesting, you could give it a try. Certainly doesn't cost anything to try :)
