My DS is turing 2 in March and we are having a party based on the book, 'If You Give a Pig a Pancake". Of course, we will be serving pancakes, along with other brunch goodies. I hate to admit it, but I mainly make pancakes using a boxed mix. Please share your yummy pancake recipes with me. Thanks!

You can always get frozen pancakes if you run short on time before the party. Walmart has a package of I think 24 for a few dollars. My kids love them.

If this is primarily going to be a very young crowd, don't go fancy on the pancake mix. This is the opportunity for the kiddie's to drop their favorites in while cooking like chocolate chips or berries or to top them withgummy bears and whip cream. I learned the hard way that from scratch not necessarily what they want. I would get several of the premixed containers that are shake and pour and make it easy but fun.

Hi S., this is a recipe that my husband came across while looking for a recipe for me. We made them together for the first time, and oh my!! they are absolutely the best tasting pancakes I have ever had!! I have never used a box before but always used an "easy" recipe. Anyway, even if you don't use this for your party, please try it sometime, they are so good.

The Best (no kidding) Buttermilk Pancakes

3 eggs, separated
1 tsp baking soda
2 tsp baking powder
1-2/3 cups buttermilk
1/2 tsp salt
1-1/2 cups flour
1 T sugar
3 T unsalted butter, melted

Beat the yolks until pale and smooth. Beat in the buttermilk, and then the baking soda and mix well. Sift in dry ingredients mixing as you add; make sure the batter is smooth. Add in melted butter, mix well. In another bowl, beat the egg whites until stiff. Fold into the batter until no bits of white are visible. Let batter stand about 20 minutes before making the pancakes. Make sure your griddle is really hot (try the old water droplet test). Ladle batter onto griddle and turn when bubbles for across the cakes. Serve with warm syrup and butter. Enjoy!!!

Here's a recipe I enjoy using with my kids:
1 cup whole wheat or all-purpose flour
1 cup rolled oats
1 tsp. baking soda
2 eggs
1/2 - 1 cup milk - amount depends on how thick you like your pancakes
1 tablespoon vanilla or almond flavoring
I'm known to always throw in random fruit or fruit sauces for extra flavor and sweetness w/o the mess of syrup

Ok I have the ACTUAL recipe from the ACTUAL author who wrote the book - I have a hardback collection of the "If you give...." series
Pankcake Party Bowl w/ Berries and Cream - This could be THE CAKE!
1lg Pancake 375 oven
1cup Flower
1tbsp sugar
11/4 cup milk
2 eggs
1/4 tsp salt
4cup mixed fresh fruit or 2 12oz bags mixed frozen fruit, defrosted)
1/4 cup sugar
1tbsp melted butter
3tbsp confectioner's (powdered) sugar
whipped cream
Thoroughly butter 9inch pie plate
Combine the four, tbsp sugar, milk, eggs,salt in a bowl and whisk until bubbly - 1 min. Pour batter into the pie plate. Bake until the edges rise and the center is still soft
While the pancake is cooking, toss the fruit and 1/4 cup sugar in a bowl. When the pancake is finished, remove from oven. Fill with the fruit. Sift confectioner's sugar over the top. Serve immediately w/ whipped cream.

Ice Cream Pancakes w/ Strawberry Sauce
4lg pancakes
1pint vanilla ice cream
1 cup water
1 egg
1cup flour
11/2 tsp baking powder
pinch salt
oil as needed (or pam)
Strawberry Sauce
1pint fresh or defrosted strawberries, sliced
1/4 cup sugar
Combine 1 cup icecream with the water and egg in a bowl. Mix well. In a separate bowl blend together flour, baking powder and salt. Add the wet mixture to the dry and combine well. Do not overmix
Heat a lightly greased skillet over MED heat drop about 1/3 cup of the batter onto the skillet for each pancake. after about 1 min, when pancakes start to bubble and are lightly browned on the bottom flip. Cook on the other side until lightly browned.
Toss strawberries and sugar together in a bowl, let sit 15min - 1hr gently mash the berries w/ potatoe masher.
Place 1 pancake in the center of the plate, top with a scoop of ice cream, divide the fresh Sauce - serve immediately
Yes, ice cream IN and ON the pancakes.
Now, THOSE are PARTY pancakes!

I stopped using all white flour in my pancakes over 20 years ago and have never looked back...

I always make my pancakes out of oatmeal and buttermilk...just google away until you find a recipe you like. Some people soak their oats over night. I soak mine for 30 minutes in the morning, while I prep everything else..

Here's one:
1 1/4 cups old-fashioned oatmeal (not instant)
2 cups buttermilk
2 eggs , beaten
1 cup flour
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
1/4 cup butter , melted
1 1/2-2 cups blueberries (fresh or frozen)

Directions:

Mix oatmeal and buttermilk.

Add eggs.

Combine dry ingredients separately.

Add to the oatmeal mixture.

Stir in the butter.

Gently stir in the blueberries (or add 10-12 blueberries to each pancakes after pouring the batter on the griddle).

Cook on hot greased griddle until bubbles show through.

Flip and cook on other side until golden brown.

I do a simple recipe I got from... somewhere and fussed with. Every weekend...
1 C milk
1 Egg
1 Tbsp melted butter
about 1/4 - 1/2 tsp vanilla (i rarely measure this)
1 1/2 tsp baking powder (I add this directly to the wet ingredients, it seems to make the pancakes fluffier - I sometimes also use a little more baking powder)
about 1/8 tsp salt
1/4 C sugar
1 C Flour
Mix all ingredients until just mixed. Make pancakes on griddle.

But I think I'll bookmark this for some of the other recipes and for the name of the book.

Our family favorite are Norwegian pancakes - I think these are pretty healthy:

2 eggs
1/2 tsp salt
1 1/2 tsp sugar
1/4 C sour cream (I substitute plain non fat greek yogurt, comes out great).
3/4 C flour
Mix this all together, then blend in 1 C of milk. (I use 1%).

Serves 4.

They are thinner than regular pancakes, they're like crepes. I have also made these slightly ahead of time, and made PB&J roll-ups with them. The kids LOVED LOVED LOVED these. That may be convenient for your party, since it is easiest to have things you can do in advance when hosting.

Even with a Bisquick recipe you can "mix it up"...

I add:
2 Tablespoons lemon juice
1 teaspoon baking soda
2 Tablespoons brown sugar
1 Teaspoon vanilla extract

I add sliced bananas AND chocolate chips or just chocolate chips.

If you want to make pancakes from scratch?
2 cups flour
2.25 cups milk
2 eggs
1 stick melted butter
2 Tblsp Lemon Juice
4 Tsp baking powder
2 Tblsp Brown sugar (you can use white sugar)
1 tsp salt

Mix flour, baking powder, salt and sugar together. Add in milk and eggs..blend...add in lemon juice blend more...until smooth...

skillet should be hot - water "dancing" on the skillet...

My absolute favorite pancakes in the whole world are crepes w/ lemon butter. I haven't learned how to make them, yet, though. I've tried. I ruin them.

As a kid (my dad makes dozens of pancake types from scratch... every other sunday was pancakes, and the sunday after was waffles.... saturday was bacon&eggs)... my favorites were cornmeal pancakes and buttermilk w/ an egg on top, and pig-n-a-blanket. Acutally, all 3 of those sound reeeeeally yummy right now.

My son when he was a toddler loved ebelskivers (he even saved up money to buy an ebelskiver pan!) and "planet pancakes" (box mix, several bowls, food coloring)... and these days he's all about strawberries and whipped cream.
