My favorite salsa is On the Border- at the restaurant (not jar). Does anyone know how they get the smokey flavor? Is it a certain type of pepper? I've tried to copy it and have the texture down, just need the smokey flavor!! Thanks.

I also love on-the-border salsa. It was a must-have for me while I was pregnant. Why don't you check out the website www.topsecretrecipes.com? I just looked, and they do not list the recipe for the salsa, but you may be able to request it. If you do, post it!

They may get the flavor by roasting the peppers/tomoatoes used. You can do this by holding the peppers over the flame of your stove or putting on a griddle/fry pan (no oil) for a few minutes and turning every so often. My husband does this when he wants darker salsa. I stay out of the kitchen because really hot peppers can make you cough.

Is the flavor from canned chipotle chiles? They have a smokey flavor.

Also, the person who wrote about roasting/charring the peppers and tomatoes is right - we make homemade salsa (verde) every summer, and charring all the veggies on the grill or under the broiler is essential to the flavor.

I've never had that salsa before, but have you tried liquid smoke? You can find it at the grocery store near the tobasco and marinades.
