Need Some Appetizer Ideas

HI all,

I know this isn't a burning question, but I'm stuck in a rut.

I have college friends coming to visit for my upcoming birthday, and they are adamant that they are bringing the dinner, wine and dessert. Lucky me! For sentimental reasons, they are doing a classic cheese fondue recipe that I gave them decades ago. One woman's husband is in the wine importing business, and the other is the World Champion of Baked Goods, so those areas are well covered.

So, for my "contribution," I just need some appetizer ideas and I just realized that pretty much all of my go-to recipes involve either bread/crackers/chips or cheese - which totally conflicts with cheese fondue!

Other than veggies and either hummus or a non-cheese dip, what are my options? I think there might be fruit with dessert, but I'm not sure about that. I thought of sweet/sour meatballs but worry if it's too heavy prior to the meal.

I have time to make things ahead of time, if that matters. I'm pretty handy in the kitchen, just feeling pigeon-holed with ideas.

So What Happened?

Thanks for the suggestions. I think I'll steer away from the bread/cracker/chips & cheese (even with spinach) recipes, since, as I explained, the main meal is bread and cheese. But they sound great for another time! I may do the fruit kabobs unless my friends have fruit for dessert, as mentioned - I'm still waiting to hear. The mushrooms sound great, and I may just roast some vegetables as a side dish rather than as an appetizer. I make those a lot anyway and there are so many combinations possible. The bacon-wrapped dates and the grilled avocado slices are things I hadn't thought of. I'll give those a try ahead of time to practice. I may also try some potato skins without cheese - bacon, scallions, broccoli. That counts as a vegetable course, right?

Shrimp cocktail
Teriyaki chicken skewers
Light broth based soup
-chunks of roasted butternut squash
- roasted potatoes, roasted carrots, roasted sweet potatoes (which you can roast ahead and reheat on site)
- blanched broccoli, roasted cauliflower
- blanched green beans
- red or green grapes, washed and well dried
- chunks of apple or firm pear (if you haven't tried fruit dipped into fondue, you'll be bowled over by how delicious the combination is)
- grape tomatoes (though the cheese does kinda slither off the skins; I like to pop a grape tomato atop a cheese-dipped chunk of bread)
- asparagus spears

Guacamole dip.
Salsa
Chips for dipping with these shouldn't be a problem.
Cold cuts (little salami, ham and pepperoni slices)
olives - green and black
Salads are great

stuffed mushrooms are yummy. I like to make them with cream cheese, crab meat, and old bay seasoning. Pour a little melted butter over each one and broil till golden.

make some wraps,or you can buy them prepared already from costco.........or you can always get some raw chicken wings and bake them and get the hot sauce to go with them.............there's also, spanakopita,,,,,,,,,or mozzarella sticks.hope that helps.have fun.and please text us some food also......

Bacon wrapped cream cheese bites. Total hit and gone within 20 minutes at our Christmas gathering. It was a triple batch as well. They were super easy and yummy too!
Spread cream cheese on crustless white bread. Sprinkle chives and cheddar on it. Roll them up and wrap them with a slice of raw bacon. Cut into 3 equal pieces and secure with a toothpick. Bake @400 degrees for 30 min.

dates wrapped in bacon is a standby that always goes over well here.

My two favorite appetizers:

Small skewers (bamboo, the kind you might put in a martini with olives on them). On each skewer, put a whole blackberry, then a folded small fresh basil leaf, then a tiny mozzarella ball (the smallest mozzarella pearls in brine, or else a cube of fresh mozzarella slightly smaller than the blackberry). Drizzle very lightly with a good raw local honey. Everyone is always surprised by the blackberry/mozzarella/basil combination. They're just intended to be a one-bite appetizer.

Another is from Bon Appetit magazine. Just type into google Bon Appetit cranberry salsa. It's a fresh salsa made from cranberries (whole or frozen/thawed, and chopped), pumpkin seeds, serano peppers, etc. Absolutely delicious. It calls for pumpkin seed oil but I can never find that, so I've usually just used a good olive oil, or maybe a walnut oil.

Hi D., Happy Birthday!

I think one way to think about the menu is: with "appetizer-type food" as your main course (cheese fondue), have "main course type food" as your appetizers. Meat skewers, shrimp, etc.

Super duper easy. It's dipping the front to make a line, then dipping one side then the other to make a deep V. Then a tiny tip to draw a couple of tiny triangles to make a bow tie look. Then dot dot dot for buttons. I can do a whole tray of these in an hour. I don't buy long stem strawberries because I never see them when I'm doing these.

I dip them in white, wipe off drippy excess, lay them on wax paper to set up.

Take the first one you dipped in white and dip it slightly sideways in milk chocolate. Turn it, dip it equally sideways in milk chocolate. Run the lower drippy edge across the bowl rim that's holding the milk chocolate to wipe off excess, then set the strawberry down where you wiped it off. I don't like dark chocolate but you can use either milk or dark chocolate.

Do not refrigerate them, they get sort of sweaty or something and don't look as pretty. Practice a few times. Go get some fresh strawberries and almond bark or whatever you have available and practice at least once.

They are so delicious I just want to eat them for the whole meal.

Here are some videos. I do not put them in the fridge or the freezer, I didn't have good luck when I did that. I just let them sit on the wax paper to set up. If it's hot in your house that might take a long time though.
