I am looking for yummy No Bake Cookie Recipes; got any good ones......ones without Peanut butter would be great.

Ingredients
■1 box Crispix cereal
■1 large pkg. mini marshmallows
■1 stick (1/2 C.) butter
■5 chopped snicker bars
Directions

Melt butter with 2 snicker bars. Add marshmallows and stir to melt. Add cereal. Add remaining diced bars. Press into greased 9 x 13-inch pan. Allow to cool for 20 minutes. Cut into bars before serving.

Yield: 10-12 bars

I like this simple recipe! Works good for elementary school "cooking" projects too because can be done on a portable burner :)

2 cups granulated sugar
8 tablespoons (1 stick) margarine or butter
1/2 cup low-fat milk
1/3 cup baking cocoa
3 cups Oats (quick or old fashioned, uncooked)


Preparation
In large saucepan, combine sugar, margarine, milk and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes, stirring frequently.

Remove from heat. Stir in oats.* Drop by tablespoonfuls onto waxed paper. Let stand until firm. Store tightly covered.

Variations
*If using old fashioned oats, cool mixture in saucepan 5 minutes.

Hi K.,
My recipe is great, and I don't use peanut butter.

2 cups sugar
1/2 cup milk
3/4 cup margarine
1/4 cup cocoa

Bring to a boil over medium heat, stirring constantly. Boil for 4 1/2 to 5 minutes.

Remove from heat and add:

1 tsp. vanilla
2 1/2 cups oatmeal (sometimes I use shredded coconut instead. Or you can do half coconut and half oatmeal.)

Mix and drop by teaspoonful onto foil or parchment paper and cool. Cookies will harden if boiled long enough.

* One thing I've learned is that as I'm stirring and it nears the 4 1/2 minute mark, the syrup begins to crystalize around the sides of the pot. You can feel that as you stir. That's how I know it has boiled long enough, but I usually go five minutes just to be sure.

4 oz. butter or margarine
1/2 cup milk
2 cups sugar
1 cup semisweet chocolate chips
3-4 Tablespoons peanut butter (OPTIONAL)
3 cups oats, quick or old-fashioned
1 teaspoon vanilla extract

Place chocolate chips, peanut butter (if used), oats adn vanilla in a large mixing bowl. Combine butter/margarine, milk and sugar in a saucepan and bring to a rolling boil. Boil for 1 minute. Combine the hot mixture with the oatmeal and chocolate chip mixture. Stir well. Drop by spoonfuls onto waxed paper and refrigerate until firm.

You can totally leave the peanut butter out of this recipe and it will be fine. I've also done Rocky Road ones (add marshmallows and nuts), Butterscotch ones (1/2 butterscotch chips, 1/2 chocolate chips), Coconut ones (add toasted coconut). You can make pretty much any flavor by adding what you want and they'll still turn out totally yummy!

Quaker Rocky Road No-Bake Cookies
2 cups granulated sugar
1/2 cup milk
8 tablespoons (1 stick) margarine or butter
1/3 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
3 cups QUAKER® Oats (quick or old fashioned, uncooked)
1/4 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (optional)
2 cups mini marshmallows
1. In large saucepan, combine sugar, milk, margarine and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes. Remove from heat.
2. Stir in oats, peanuts, chocolate morsels and marshmallows; mix well.
3. Quickly drop by tablespoonfuls onto waxed paper or greased cookie sheet. Let stand until set. Store tightly covered at room temperature.
Makes about 3 dozen.
Microwave Directions: Place sugar, milk, margarine and cocoa in medium microwaveable bowl. Microwave on HIGH 1 to 2 minutes or until mixture is melted and smooth, stirring every 30 seconds. Proceed as recipe directs.

Chow Mein Noodle Cookies

3 cups butterscotch chips (or chocolate)
5 oz chow mein noodles
1 cup peanuts (or if allergic substitute marshmallow, raisins, etc)

Melt over low heat stirring constantly (or microwave) the chips, add noodles and nuts. Let cool slightly, drop by spoonful on wax paper and cool til set.

This is great fun for even young kids to do.
