For breakfast, my sons at that age also loved muffins. I'd make a box on Monday and reheat one a day for him. They also loved biscuits and sausage. You can brown the sausage like you would ground beef into tiny little chunks. Of course, that required cooking, so was a Saturday morning meal while I was working :). Waffles also were a favorite. You can buy flavored waffles if you don't want to mess with the syrup which can get quite sticky. They also love toast - peanut butter, cinnamon, or buttered. My oldest son loved the Gerber oatmeal with a jar of baby food fruit swirled in it. He ate that every morning until he was well past his 2nd birthday.
As for dinners, I'd give him whatever we had - just chopped super tiny. I would use the Pampered Chef food chopper to get it super diced. WHen they were this age, meatloaf and mashed potatoes was one of their favorite meals. Spaghetti was also a huge hit every time! (Still is in fact)
