I have several fondue recipes. Some use peanut oil and people spear and cook their foods in the hot oil. The easiest one of these is using 20 cocktail franks and an 8 oz can of refrigerator biscuits. Slash each frank lengthwise enough to puncture skin. Blot with paper towels. Separate dough into 10 sections, cut each in half, wrap around franks and pinch seams. Heat 3 cups of peanut oil to 475 Spear with forks at seams to cook in hot oil. Serve with mustard or mustard sauce.
Beer Rarebit Fondue - this is an easy spicy cheese fondue served with bread. Makes 3 cups. 4 cups shredded sharp natural cheddar cheese, 1/2 cup beer, 2 tsp. worcestershire sauce, 1/2 tsp dry mustard, 1/8 tsp. garlic powder, dash tabasco, 1 Tbsp cornstarch, 2 Tbsp water, French bread cubes. Bead cheese at low speed, gradually add beer mix at medium speed till fluffy. Add seasonings, melt on range, then mix cornstarch and water and add to fondue. Cook and stir till thick and bubbly, transfer to burner.
Strawberry Dessert Fondue - serve with chunks of peaches, pears, pineapple, cake cubes, marshmallows
2 10oz pkgs. frozen strawberries, thawed. 1/4 cup cornstarch, 2 Tbsp sugar, 1/2 cup water, 4 oz container whipped cream cheese softened, 1/4 cup brandy. In saucepan crush strawberries slightly, blend together cornstarch, sugar, and water add to berries. Cook & stir till thick and bubbly, pour into fondue pot and put on burner, stir in softened cream cheese and gradually add brandy.
Of course you can also do chocolate which is a favorite. The classic cheese fondue calls for white wine and kirch - let me know if you want that recipe. These are pretty easy. With little ones, it might be a good idea to not do the hot oil if they are going to be racing around. :-)
