Just incase Russian Tea Cakes don't ring a bell and are the cookies you are thinking of, they are a cookie that several cultures make a version of. They are also known as German Nut Balls, and Mexican Wedding cookies to name a few. Very easy to make and easy to find the recipe online. Have fun, Yum
Russian tea cakes? Were they in balls rolled in powdered sugar?
Hi Jeep---My first thought was russian teacakes, but the confirming question was the shape. Russian teacakes are little balls rolled in powdered sugar. One of my favorites. Here is the recipe:
1C butter, softened
1/2 C powdered sugar
1tsp vanilla
2 1/4 C all-purpose flour or whole wheat flour
1/4 tsp salt
3/4 C finely chopped nuts (we use walnuts...good source of omega 3 fats)
powdered sugar
Heat oven to 400 degrees. Mix butter, 1/2 C powdered sugar and the vanilla. Mix in flour, salt and nuts until dough holds together (do not overmix or cookies will be tough).
Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet. Bake until set but not brown, 10 to 12 minutes.
Roll in powdered sugar while warm...be sure they are not too hot or sugar will melt and get messy...then cool. Roll in powdered sugar again. Makes about 4 dozen cookies.
I'm going to go make mine right now. Enjoy...and Merry Christmas. D.
Russian Tea Cakes, sooo good! Have a Merry Christmas!
My mom makes Greek shortbreads... shortbread cookies with ground almonds. Maybe thats it?
Probably pecans.
Commonly used in cookies.
Or, hazel nuts are great too....
