Beyond Macaroni and Cheese...some of my kids favorite recipes are in there! I got it when I was a MOPS coordinator. I also search the internet for kid friendly recipes. My kids are old enough to help now.
I am looking for a good cookbook with recipes that kids like, but also include healthier options. I am not much of a cook and work full time, so I would need "easy" recipes that can cook in one hour or less.
Does anyone have a great recommendation?

I found a book called The Frantic Family Cookbook (Mostly) Healthy Meals in Minutes. By Leanne Ely, C.N.C
It is full of kid friendly easy recipes and they are rated. I am not sure where I got it, but I am sure you can buy it on Amazon or something and have it delivered so you dont have to go hunt for it.

Deceptively Delicious by Jessica Seinfeld is so awesome. The only thing you could consider time consuming is the steaming and puree of the veggies and fruit. However, if you do it ahead of time (like she tells you in the cookbook) then all the recipes are pretty quick. Even though you think you aren't much of a cook just follow the recipes. It's pretty people friendly. It also works great for people with a sweet tooth or husbands who don't like to eat veggies/fruit as well. Good luck and have fun!!
Oh honey. I can make a full meal in 30 minutes or less. you want recipes, I can send you some of my own. Otherwise go to your library and look in the 641's and you will find a ton of suggestions and cookbooks. Or go online and look for quick recipes that kids like. I just now googled quick healthy recipees that kids like and found a lot of hits. Also just put out plates of raw veggies and cheese and boiled eggs late in the afternoon and kids will fight over them and it won't matter much what you put on the dinner table.

I bought a really good one that is from Betty Crocker. It has very colorful pictures and easy (not too many ingredients) recipes.
My favorite cookbook "Deceptively Delicious"!! As others have mentioned, these recipes are very kid friendly, my kids love them, and they're all so easy. You do have to steam and puree veggies to add to the recipes, and I have done so, but most of the time I just use baby food veggies or fruit. I always have a supply of baby food, and add them in when needed.
This cookbook is fantastic, instructions for steaming different veggies, full color recipe pages (a must for me) and most of the ingredients I already have, makes it much easier to make the recipes.
I just joined a cooking club called Easy to Bake, Easy to Make. Their recipes are awesome! Very simple, not a lot of ingredients, but flavorful! They have a lot of baking options instead of frying, pan frying, etc. I get 12 new recipes every month. I'm not sure where to find it, but you could probably Google it.
Believe it or not, Safeway's website also has a great tool... the Flex or something like that, you can see it at safeway.com, it's on the homepage. You put in your food and it gives you all the dietary exchanges and healthier options.
One thing my kids and I look at foodnetwork.com, do a search for kids and it will come up with 209 or so recipes under 20 min. to cook with kids for kids
I like the Deceptively Delicious cookbook by Jessica Seinfield. If you aren't familiar it has normal recipes but she adds/hides pureed vegetables in the foods. Not only have a made several of the recipes but it has helped me to just turn my mind in the direction of thinking about what pureed vegetables can I add to my everyday canned and boxed foods making them much more nutritious. I havn't make one thing I haven't liked. You might check it out.

I know Southern Living at Home has a great kid friendly cookbook. My aunt is a consultant who also keeps her grandchildren and my son. The best overall cookbook I know of is called, "More With Less." It contains good advice and recipes with nutritious meals made from scratch using less expensive food.
The most important thing you can do is to purchase fresh organic fruits and vegetables for your child to make up 75% of his or her diet daily. Encourage your child to eat raw veggies and fruit rather than juice, but be sure you thoroughly wash them.
Protein in the form of grains and vegetables is much cheaper and in the right amounts can be as beneficial as dairy products and meats. You may need to gradually wean your child from dairy and meats as their main source of protein, but be sure to buy those that have not been fed hormones and antibiotics. A better source for calcium that the body can absorb when combined with sunshine as the best form of vitamin D, comes from vegetables rather than dairy. If you have a source for unpasteurized dairy, the enzymes haven't been destroyed, and yogurt or hard cheeses are much better than milk in the diet. A good resource: www.betterbones.com

Pampered Chef has a good kids cookbook. (pamperedchef.com) And JoAnn's sell a book "Cooking healthy with your kids."
The second book is fabulous and has lots of healthy recipes! The only down side is some of the measurements are in metric so if you aren't versed in ml's then you will have to print our a conversion chart. I just used the oportunity to teach my kid about the metric system. My 6 yo loves it and loves the recipes.
Try the crockpot. Almost any crockpot cookbook will do. You can't get any easier because all you do is toss in some stuff in the morning and turn it on low. When you get home there's hot, healthy dinner. I would recommend my favorites, but my family eats low carb, so that's what all mine are. I will give you a great tip though. Shop Saturday for everything you need for a weeks worth of recipes. Prep everything Sunday and put it into freezer bags with the name and time it goes in for and stick the bags in the fridge or freezer. That way, in the morning you just open the bag and dump it in. No scrambling to chop celery and onions while you get ready for work. Anyway, that's what we do and it has totally simplified my life. Good luck.
Just had to tell you about the one I have:
It's called The Science Chef by Joan D'Amico and Karen Eich Drimmond.
It is 100 fun food experiments and recipes for kids. Not only does it have fun recipes for them, but it shows them why things happen the way they do. For example, one of our favorites is Chapter 18 All That Sugar! It tells how to make sugar crystals and then has 5 recipes using sugar that any kid can make.

Deceptively Delicious is great! It's by Jessica Seinfield and it has easy to prepare meals for the entire family. She also uses vegetable purees in her recipes so you know your kiddos are getting their vegetables.

Try Deceptively Delicious. I have not tried it myself but I have heard there are some really great ways to hide healthy foods into meals that kids will like. I pla on getting a copy soon!

they have a great cookbook at sams club........ it has really good recipes and has all the disney characters in it. i cant remember what its called.... but there is also a better crocker kids cookbook that is pretty good too! hope that helps.

Deceptively Delicious by Jerry Seinfield's wife...she puts veggie purees into regular food and i have heard it tastes great!
i don't have one, but a mom just told me today that a george forman grill will save your life. she says you can do chicken breasts, fish filets, grilled veggies, grilled cheese, quesadillas, everything, and it only take s a teensy amount of time. her kids like garlic salt and a little pepper. oh, and also, there is very little clean-up. i think i will buy one this weekend, and i am pretty sure they are for sale everywhere, like target and stuff. we'll see...
I bought my grandmother a Luby's cookbook and then I went back and got another one for myself. They have some pretty good recipes in there that don't take too much time. Check out Rachael Ray's 30 minutes recipes too. I am just like you I work full time and I need something I can prepare quick and healthy.
Few of my own ideas:
Chicken or turkey tacos- I use mild picante sauce to season instead of the reg. taco sauce in the packet. The kids like when I make these because I put everything on the table and they can make their own tacos.
Whole grain spaghetti
Meatloaf- but I use ground turkey and ground italian sausage
Homemade Pizza- two boxes of jiffy pizza mix, 1 jar of Ragu pizza sauce, ground turkey and pepperoni(makes a cookie sheet sz. pizza) - This is our Friday meal. I always make a salad with pizza or give the kiddos raw veggies with lo cal ranch dressing.
Also we are trying to stay away from sodas and juices so we use the target brand drink mix(strawberry lemonade). You only need 1 bottle of water and drink a little out and shake it up. I put these in my kids lunches as well. you can find these by the koolaid on the juice aisle.

Deceptively Delicious is a great one. The recipes are kid-friendly and very healthy. It teaches you ways to "hide" good-for-you stuff in the foods kids love.
I checked a cookbook out of the library once that was just what you're looking for. I think it was called "kids favorites, done healthy"
It had lots of really good recipes that my husband, two-year old and I all liked. I also liked that there was a section on fun ideas for the lunchbox.
An oldie but goodie is the Betty Crocker Junior Cookbook. My mom bought it for me when I was a little girl and I still use the same cook book to this day. They have a lot of great recipes that I use all of the time. They still sell the same one too after all of these years. It is HIGHLY recommended!
