If Pork Is for Dinner - I Got a Great Recipe to Share!

We had pork chops for dinner last night and wanted to try something different. I found this marinade in a cook book and it was awesome. The kids and hubby were asking for 2nds and 3rds, lol.

Hearty Pork Chops

2/3 cup lemon-lime soda (I used 7-up)
1/2 cup soy sauce
1/4 cup honey
1 teaspoon dried thyme
3/4 teaspoon dried rosemary
1/4 teaspoon pepper
6 bone in pork loin chops (I only used 4 large pork chops)

In a large resealable plastic bag combinne the first six ingredients; add pork chops. Seal the bag and turn to coat. Refrigerate fpr 4 hours or overnight (I did 4 hours) and turn the bag occasionally.

Drain and discard marinade. Grill pork covered over medium heat 6 to 8 mins each side or until Juices run clear.

Like I said - It was awesome!

So What Happened?

I thgink inside would work. It wasnt gooey by any means and didnt tast sweet. I think the soy sauce helps with all that.

that sounds delicious. i didn't have a yummy dinner. i have a tummy bug so i just had some very bland oatmeal with just a touch of brown sugar and milk. :( i think we're going to do something similar tonight because not only do i still have the bug, but fiance does now too.

That sounds like it is great. I will give it a try tommorow. My recipie is easy and great. I take turkey cutlets or chicken breast cut them up and brown them on top of the stove with a small amount of extra virgin olive oil. I next take some black bean and corn salsa.I use the walmart brand. I put about 3/4 of the jar in there and let it simmer with the chicken or turkey for about 15 minutes. It does not need further spices as the salsa has plenty. I serve it with some brown rice. I also put a little bit of shredded mexican blend cheese on top. It is good and takes about 30 minutes to prep.I hope you enjoy this recipie.

Would that marinade work if I cook inside in the iron skillet, or would it be too sticky? It's snowing here and I cant bbq :(

Thanks for the recipe. We didn't have an awesome dinner last night, it was very blah but last month I was looking for recipes with spinach and I found this one by Giada from Food Network and is call:

Pork Chops Stuffed with Sun-Dried Tomatoes and Spinach

Ingredients
1 tablespoon olive oil, plus 1 tablespoon
2 cloves garlic, minced
6 sun-dried tomatoes, diced
1 (10-ounce) bag of frozen spinach, thawed and excess water squeezed out
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/4 teaspoon dried thyme
1/4 cup (2 ounces) goat cheese
1/3 cup reduced-fat cream cheese
4 (4-ounce) center-cut pork chops
1 1/2 cups chicken broth
1/2 lemon, zested
2 tablespoons lemon juice
2 teaspoons Dijon mustard
Directions
Warm the 1 tablespoon olive oil in a medium saute pan over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the sun-dried tomatoes, spinach, salt, pepper, and thyme. Cook until combined, about 2 more minutes. Transfer the mixture to a medium bowl. Add the goat cheese and the cream cheese. Stir to combine and set aside.

Use a sharp knife to cut a pocket into the thickest portion of the pork chop. Stuff each pocket with 1/4 of the spinach and sun-dried tomato mixture and close the pork around the stuffing. Season the outside of the pork with salt and pepper.

In a small bowl combine the chicken broth, lemon zest, lemon juice, and mustard.

Warm the remaining 1 tablespoon olive oil in a large, heavy skillet over medium-high heat. When the pan is hot add the pork. Cook until golden and cooked through, about 4 minutes per side. Transfer the pork to a side dish and tent with foil to keep warm. Add the chicken broth mixture to the skillet over medium-high heat. Scrape up the brown bits from the bottom of the pan as the chicken broth simmers. Reduce the broth by half to make a light sauce, about 8 minutes. Spoon some sauce over the pork before serving.
