We are celebrating a coworker birthday tomorrow and we are having cake in the afternoon but I thought it would be nice to have something for breakfast as well. So I'm in need if ideas that are cost efficient. There are 9 in my group and most are trying to eat somewhat healthy. I priced bagels and they are $14! Any other ideas?

What can I do next?

We did a fruit and yogurt parfait bar for a coworker. Every one brought in some different fruit, yogurt, granola and fat free cool whip and we used plastic cups to make our our own parfaits. It was super yummy, not expensive and waist friendly!

I make an omelet casserole that is so simple and delicious (and probably costs no more than $6 when all is said and done).

Beat 10 eggs and one cup of milk (for a 9x9...this is quite filling, so I would think you could make it work with that...18 eggs and 2 cups of milk for a 13x9). Mix in shredded cheese (cheddar), some sort of breakfast meat (bacon, cooked loose sausage, ham, etc.), and any other things you like in an omelet (we love onion and colored pepper in ours). Grease pan, throw egg mixture in and bake at 350 degrees for 45 minutes. So quick, simple and delicious, plus very healthy!

Quiche. You can even make it with blended cottage cheese and a touch of milk instead of cream and milk. Load it full of veggies. Cook it the night before. It reheats in seconds but is good cold to. You can get pie shells from the freezer section if you like, or you can make it thicker and it can be 'crustless'

fresh fruit plate with some quick bread (banana, zuccini, etc) is another idea.

We have an office of 20 and we do pancakes, all you need is the batter, a griddle, and syrup and butter. Easy and cheap. We have also done donuts, which are cheap, and you can always do a breakfast potluck where everyone brings something.

What about a fruit platter or fruit salad? You should be able to do something nice for $8. In our area you can get a watermelon for $4, and grapes are $.99/lb.

How about some homemade muffins?

Go to the store and get some boxed quickbreads. They are always delish. Or if you have time make some yourself-maybe zuchini bread?

A box of cinnamon streusal muffins and some fruit (grapes and cubed watermelon?). OR, muffins and a breakfast casserole... (brown 1 lb sausage, diced bell pepper/onions, pour off the grease, and then pour egg mixture (10 scrambled eggs and 2 cups of your favorite shredded cheese and 1/2 tsp black pepper) over the top. Bake at 350 degrees for 25-30 minutes. Reheats wonderfully in the microwave.

alot of grocery stores have bagels with the yeast donuts for $.60 each, I dont know where you are looking that have bagels that are so pricey! you could also make your own fruit trays (its cheaper than the already put together ones.)
