I Need to Bake Some Delicious Cookies for a Diabetic

I know there are tons of recipes out there, I was hoping one of you ladies and gents had a kick-a** recipe that always turns out wonderfully for you. My lovely, lovely neighbors have a daughter who's diabetic and I'd love to bake them something from my kitchen in appreciation of how sweet they are. I also discovered that I've inadvertantly kept one of their Christmas containers FROM LAST YEAR and would like to send it back to them full instead of empty.

Any recipes you always have luck with? I'm new to cooking with a Splenda type product and would love to have suggestions on some cookies that turn out delicious for you.

Sugar Free Cookie Recipes - Great for Diabetics

If you are looking for a great tasting sugar free cookie recipe here are a few good ones. My fiancée, his mother and his daughter are all Diabetics, we count the carbohydrates in each meal or snack to determine how much medicine they should take with that meal or snack. If a Diabetic does not slow down on their sugar intake they can seriously damage their bodies. Living snack free is pretty much impossible, especially for kids. Carbohydrates inside of foods turn into sugar inside the body so it can be quite a challenge to find carb/sugar free cookies at the store so I have tried for two years now to make some sugar free cookies that actually taste good too. With four kids in the family sugar free cookies were at the top of my list of snacks. These have been tested and approved by some pretty picky kids, give one of them a try and see what you think.
Sugar Free Oatmeal Cookies Recipe

Ingredients:
1 cup uncooked oats
1/3 cup Splenda
1 Egg
1 tablespoon Honey
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract

Directions:
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Drop a large serving spoon full of batter onto a baking sheet sprayed with nonstick cooking spray. Bake for 12-15 minutes or until browned.

Sugar Free Chocolate Chip Cookies Recipe

Ingredients:
1/2 cup soft margarine
1 Egg
1 teaspoon Vanilla
1/4 cup Non-fat dry milk
1/2 cup Splenda
1/4 cup Water
1 cup Flour
1/2 teaspoon Baking soda
2 ounces Dietetic choc candy - chopped

Directions:
Preheat oven to 35B degrees. Blend Splenda and margarine in a bowl. Add egg, vanilla, non-fat dry milk and water. Blend on low until mixture is smooth. Blend chocolate candy into the mixture. Drop from teaspoon onto lightly sprayed baking sheet. Bake for 20-25 minutes

Tip: Sometimes you can simply replace the sugar in a recipe with Splenda sweetener. It bakes just like sugar with out the sugar. I was very skeptical at first but it works great. The recipes may still have some carbohydrates in them but far less than if you use regular sugar in them. Some Carbohydrates are good but sugar is not one of them, it makes the blood sugar in a persons body spike up and then drop very quickly, which is not good for a Diabetics system.

Make regular cookies. My daughter, son and husband all have Type 1 diabetes (assuming your neighbor's daughter does too) and they can eat any kind of food -sweets included! :)

I don't feed my family ANYTHING with Splenda in it, so don't worry about using special sugar substitutes.

You are so sweet to be want to do something for them and EXTRA sweet to want to be considerate of their dietary needs. Whatever you bake for them will be wonderful!

I use the toll house recipe but with these differences.
use 3/4 cup splenda, decrease brown sugar to 1/2 cup, decrease flour to 1 1/2 - 1 3/4 cup, and use sugar free chocolate chips. These will spread out and appear more like real chocolate chip cookies. I bake at 350 oven for 8.5 minutes. Remember with splenda they will not brown like normal cookies. My family loves this recipe.

for all of my husband's sweets, I just substitute Splenda products for the sugar. Sometimes I have to add a little more liquid....seems like the artificial sweeteners tend to dry out the finished goods.

Why does it have to be cookies? You're trying to do a nice thing by wanting to make "diabetic cookies", but there's no such thing. You could substitute almond flour for some of the regular flour, but I would just do something totally different. Nuts would be good. Or a fruit basket, even though fruits have sugar, they are a better choice and less tempting than eating too many cookies. It's total carbs, not just sugar. Even a small package of dark chocolate would be okay, dark having a lower glycemic index than milk chocolate. Even sugar free cookies have sugar alcohols that count as sugar, and they taste horrible, and the total carbs are about the same as a regular cookie.

It is very nice that you want to do something for your friends. It is not just the sugar in cookies - it is the carbohydrates that affect blood sugar for people with diabetes! You could go to the diabetes.org (American Diabetes Association website) and they have a some recipes that have been modified to make them more healthy. Substitution Splenda for regular sugar is a good way to reduce the carbohydrates in a recipe. In many sugar free candies, Substituting sugar alcohols for sugar is a big problem because it can lead to stomach upsets and diarrhea People with diabetes can eat anything as long as they they control the portion size and make adjustments in their meal plans. ((Make 2 inch cookies instead of 4 inch cookies) Some can adjust their insulin doses to cover the extra carbohydrates.
