We are trying for the pronunciation of "Ann ika" but I'm finding that not many people pronounce it that way...

I'm a big Star Wars fan, so I also thought of Anakin Skywalker. I would probably pronounce it "Ann" "i" (short "i") "ka." Rhymes with Monica :-)
One of my closest friends is named Annika. It's pronounced "Ah-nnika" (like Monica without the M), and I've never heard anyone mispronounce it, nor has she ever complained of having a difficult-to-pronouce name. In fact, a few folks (including her husband) use the nickname "Annie" for her, which changes the A sound, but it never seems to be an issue, just endearing. I think it's a great name!

In Dutch, Annika is ann-EEK-ah. In Swedish, unn-EEK-ah. In German, it is Annie-kah. In Hebrew, it is spelled Anika and pronounced un-EE-kah.
If a certain spelling and pronunciation are important to you then you need to choose another name. Your family will be correcting people all the time and that gets really old really fast. Just ask my friend who thought it would be cute naming her daughter Alice but spelled Alyse. They've actually considered getting her name legally changed to Alice because the correcting is beyond annoying

I would assume that the "ann" is pronounced as though it were Anne or Ann. Then I'd assume the "ika" would be like the last two syllables in Monica. Although I would think that some would pronounce the first A like the a in father.
You'll just have to correct people's pronunciation if you choose a name that can have varying pronunciations. We know a girl named Hannah, but her family pronounces the first syllable like "hah" as in father, not "ha" as in "hat".
