Here's a great and easy recipe that we love. It's from my Better Home's and Garden Cookbook. (I changed it a bit.)

3 tablespoons margarine or butter, melted
2 teaspoons Worcestershire sauce
approx. 1 lb boneless chicken breasts cut into 1 inch pieces
Aprox. 3/4 cut Progresso Italian bread crumbs
1/2 cut Parmesan cheese
Oven 450
In a bowl stir together margarine or butter and Worcestershire sauce. Add chicken and toss to coat.
In a plastic bag stir together bread crumbs and parm. cheese. Add chicken pieces, a few at a time, closing bag and shaking to coat pieces well. Place chicken pieces in a single later in a 15x10x1 inch pan.
Bake at 450 for 7-9 minutes or until no longer pink.
We serve them with b-b-q sauce, and/or Ranch dip.
Enjoy!
(The original recipe calls for 50 crushed wheat wafers...I like the seasoned bread crumbs better.)

Here's what I do:

Make an egg mixture of 2 eggs, a little water, and a jar of baby food, like sweet potatoes or carrots. Dip the chicken tenders in egg mixture, then in breading, which is whole wheat panko and about a 1/4 cup wheat germ mixed together. Fry in olive oil. Very healthy, and my whole family loves them. Oh, and remember to change the oil between each batch or else the chicken will be black.

I have also heard that you can use oats (made fine in a food processor) instead of bread crumbs as a healthier alternative.

There's a recipe on weelicious for "wee nuggets". They're healthy, delicious and so easy to make. I'm putting up a recipe for chicken on a stick next week that's SO delicious and fun for kids to easy since it's on a stick!-www.weelicious.com

This is so easy and you can make it ANY way you like! You can use boneless chicken breasts or thighs. Cut into strips or nuggets. In one bowl mix a little egg with some salt & pepper. In another bowl, mix your breading - you can use flour, cornmeal, breadcrumbs or any mixture of the three! Add a little salt & pepper and any other seasonings you like - onion powder, garlic powder, italian seasonings, etc. You can even stir in parmesan cheese or crushed French's fried onions - or spice it up by adding red or cayenne pepper. Dip the chicken into the egg mixture and get moist all over. Dip into your dry mix and coat well. You can put a small amount of olive oil in a skillet and brown chicken on both sides until cooked through. Or you can put the chicken on a cookie sheet and bake in the oven for about 30 minutes on 350 (flipping half way thru). Experiment and see what your family likes! Enjoy!

Hi M.,

Here is a great one that is GF-CF (gluten free and casein free) that is very healthy and tasty. From the www.tacanow.org website.

Batter-dipped chicken nuggets

Arrowhead Mills All-Purpose GFCF Baking Mix
Salt and pepper to taste
Onion powder
Garlic powder
Cumin
Oregano
Water
3 chicken breasts, skinned and chopped into nugget sized pieces
Safflower or sunflower oil (or other high-heat oil) for frying

Mix flour and spices together with enough water to thickness desired. Let set for 5 minutes (you will see it rise a bit). Coat chicken in mixture, drop in oil and fry. Drain on paper towels. If you undercook these a little, you can freeze them for later use. Reheat in oven at 350 for 20 minutes if frozen.

Hi M.,

I use the recipe on the back of the Bisquik box. It's basically dip the chicken in egg and then into a Bisquik and parmesan cheese mix. Drizzle a little melted butter on top and bake. It's really easy. My one year old loves them, yet they are tasty enough for adults.

There is a wonderful recipe in Jessica Seinfeld's "Deceptively Delicious" cookbook. It can also be used for fish sticks too.
