I also love roasted veggies. We do parsnips, carrots, fingerling potatoes, beets, sweet potatoes, and a few pears. Peel and chop into chunks toss with a generous amount of olive oil, salt and pepper and some fresh thyme or rosemary and roast at 375º until golden brown and soft.

Is sweet potato casserole big in Texas? If not, take this and everyone will go nuts! My husband and I are the only two humans on earth who don't like it ;-) Seriously -my mother was famous for it, and I've taken up the mantle since she died last year. I LOVE the way it smells, but can't do the texture. I have made it several times though, and evidently I do fine with the recipe. It's a little different because it's not covered in marshmallows like so many sweet potato casseroles, and trust me, no one misses them. Easily doubled or tripled. I double mine and put in a 13x9 Pyrex. Also -if you're pressed for time and don't mind spending the extra $$, you can use the Ore Ida Steam and Mash Sweet Potatoes in the frozen food section instead of baking, peeling and mashing fresh ones. Just mash the steamed potatoes though -DON'T follow the directions about adding milk, etc.:

Broccoli Cheese Bake

Bag of frozen broccoli (or fresh)
1/2 Can of cheese ( we use mexican white cheese). You can substitute Velveeta.
1/2 package of Ritz (or similar crackers)
Few pats of butter

Cook broccoli first (if frozen). If not frozen, put into dish, add cheese, crackers, butter and stir. Cook on 350 for 20 minutes. My kids LOVED this last night!

need more info! Do you want a vegie, salad, or potato dish? !!

I love a raspberry dressed salad for with holiday meat entrees. I use a combo of wild greens & spinach, red onion, cucumber, strawberries, cranraisins or dried cranberries, pecans, & either Italian/feta/blue cheese (they all work well). Sometimes I add fresh or mandarin oranges. Sometimes I add grapes! It's a healthy mix & tastes soooo fresh against the heaviness of holiday meals.

I have made a variation of the following recipe, but instead of doing it on the stovetop I roasted mine at 400 for 45 minutes stirring every 15 with everything but the cranberries, then after adding the berries, roast another 20 minutes. It's absolutely fantastic & got rave reviews from everyone, kids included!

My mom makes an amazing and easy potato casserole...

- Package of frozen hashbrowns (the "chunked" ones)
- 2 cups of shredded cheddar
- can of cream of mushroom soup
- 8 oz container of sour cream
- 1 cup of corn flakes with 3 tbl of melted butter

Mix everything except the butter and flakes and put it into a rectangular casserole dish. Bake at 350 for 30-40 minutes. Sprinkle the top with the buttered cornflakes and bake another 10 minutes or until the cornflakes are "browned".

Cinnmamon Corn! It sounds strange but is ALWAYS a hit.

Preheat oven to 350 degrees. Lightly grease a 1-1/2 qt casserole dish

In a large saucepan, heat 1/2 c margarine & 1/2 c sugar until margarine is melted. Mix in 1/4 c flour & remove from heat. Whisk in 2/3 c evaporated milk then mix in 2 cans drained whole kernel corn. Pour into prepared casserole dish. Bake for 60 minutes until bubbly. Sprinkle entire top with cinnamon sugar.

The small (5 fl oz) cans of evaporated milk measure out to be 2/3 c. That way you don't have to buy a large can & have the rest go to waste.

To make cinnamon sugar, blend 1 tsp ground cinnamon with 1/4 c sugar.
