Try sweet potato french fries ( you can find them in the frozen section at Walmart ) or mashed cauliflower "potatoes". Here's alink to one recipe, but I'm sure if you did a search, you could find a ton of other versions.

I mix canned mixed veggies in with baked beans. My son LOVES it, and the beans are great for fiber and protein too!

I use 1/2 sweet potatoes and 1/2 pizza sauce and make mini pizzas. I let the kids put whatever toppings they want and they still don't know the difference.
We add lots of veggies (carrots, celery, zucchini, spinach, canned green beans etc) pureed in the food processor to meat loaf or spaghetti sauce or mac and cheese- just about anywhere we can hide it.
There's a recipe out there for spinach lasagna that doesn't require meat or precooking the noodles. My family absolutely LOVES it. If you can't find it then email me back and I'll type it in for you.

You can sneak lots of thinks into sloppy joes & spaghetti sauce- even fake (TVP) meat!!

I bought a small food chopper at Wal-Mart, very affordable. Every week I buy a big bag of ready to eat spinach and chop it up in the food chopper. I add it to almost every food I make. My boys favorite is the nacho cheese sause with little tiny green seasonoing(so that's what they believe).
i use v8 in place of about half of my tomato sauce in recipes!
If you have not seen it on Oprah, Jessica Sienfeld has a WONDERFUL cookbook FULL of ways to hide almost any veggie in all sorts of dinners and even brownies and cookies. The book is called "Deceptively Deliciuos" I really recommend it !!!!
I have found that it is best to try a variety of veggies - different ways - so kids will learn to love veggies, and KNOW they are eating them. My kids love almost all veggies - esp. Brocolli - that is a fave. Try oven roasting cauliflower - it is so good - also give kids different dipping sauces to try (like lite Ranch, honey mustard, ketchup, salsa etc.) - my kids will eat most raw veggies with hummus or ranch. some of the deceptively delicious recipes end up being a LOT of sugar for a small amount of veggie puree - I would prefer to give my kids a less sugary treat for eating their veggies in their natural states. Again, that is just me. I am not beneath adding EXTRA veggies to meatloaf, sauces etc - but they still get veggies on the side too.
