I tried to remove an ink stain on my leather couch with hairspray and ended up discolouring the couch instead. So now I have an ink mark plus the discolouration. Do you know how I can at least get the color back? Will shoe polish work?

I'd buy a leather repair kit. They usually have stuff in them to repair rips, color over stains, and a bunch of other fixes. Magic Mender has over 1500 colors according to their site, including popular furniture colors. Maybe check out their site. :)
You need special leather cleaner for the ink, but now you also need to repair the leather from the hair spray damage. Do not put any more products on your couch. Look locally and find a professional cleaner that handles upholstery and leather.
Why not call the manufacturer of the couch? They probably have replacement stain, and the proper cleaning product.
I wouldn't just use shoe polish, because not only will it end up on your clothing, but I'm envisioning ink mark, discoloration, plus some mismatched color of shoe polish, really compounding your dilemma.
Call a reputable furniture store and ask for the name & number of the furniture repair guy they use.
Leather can be repaired. We had it done ( wet dog belly + leather + a few years = leather discolorization).
Or google "leather repair" in your city.
