Hello my Mama Friends! I recently posted a question about what your favorite Winter Meal is, and some asked for my recipe for my Green Chili Stew. So I will post it here for you. :-) Please email me a personal message if you have any questions.
GREEN CHILI STEW
You will need:
x 2 (4oz cans), of Chopped/Diced Green Chilies (MILD)
x 1 lb Ground Beef ( i use the 80/20 for more flavor)
x 1 Swanson Beef Broth (i believe the box is a 16-24oz)
x 4 cups of Diced Potatoes (diced small)
x 2 cups of Diced Roma Tomatos (diced small)
x 1 Medium Yello Onion (diced)
x 4 Cloves of Garlic-minced (or you can use garlic powder to taste)
x 3/4 cup Fresh Cilantro ( i use the one in the seasoning jar-about a palm full)
Table Salt-to taste
Cook your meat in deep non-stick pan until about half way done and add the onions, green chili, and garlic and cook until done and add salt to taste. (you can drain it if you like. I don't, because it allows for more flavor).
Add all the other ingredients and cook until potatoes are soft. Add the Cilatro last.
This goes well with Tortillas, Cornbread, or even just crackers. :-)

EDIT: I use the Mild Green Chilies, however if you prefer Hot or Medium that would be great too. For me, it's
not so much of the spiciness of the stew, but rather the taste. :-) YUM-O!

Wow, it's almost the same as mine, but my husband also likes to add a can of hominy. It's great for a little variety. Thanks for posting!
