Good Summery Meal for New Mommy

OK ladies, two friends are overdue with babies, so I'm going to need to make them some meals real soon. I was going to just make something to throw in the oven, but then I got thinking that maybe I could make something more summery. I hate for them to have to turn on an oven. The one caveat here is that I have a 6 month old baby and a two year old, so I don't have much prep time. No more than an hour prep, please.

Suggestions?

ok a couple of things,

Make Burgers on the Grill, she can freeze them and microwave them as she wants them.

Also Crockpot meals would work to.

I always make a lasagna and portion it out so she can freeze and microwave.

There is also a chicken cassarol you can make and she can microwave.

Chicken breast cut up in cubs, place in baking dish
can of cream of chicken soup (or what ever your favoret cream soup) to cover chicken
Stove top stuffing(generic is fine) cover the mixture and back until bubbles and stuffing is toasted.

I've made this recipe twice lately for friends that have had babies! I love it because I can make it little by little, throughout the day, as I have time. (My kids are 4, 3, 2, and 6 months.) Also, it's eaten cold, so that's great for the person you're making it for, as well as giving you the freedom to drop it off any time of day! Furthermore, you can change it up in lots of easy ways if you want: ham instead of turkey, your choice of cheese, cut up baby carrots, whatever kind of pasta you like....

TRICOLOR SALAD
Salad:
8 oz. tricolor fiori pasta
1 cup frozen peas, defrosted
1/2 cup shredded carrots
1 cup reduced-fat cheddar cheese, cubed
4 oz. smoked turkey, cubed (ask for 1/2 in. slices at the deli)
Dressing:
1/2 cup light mayonnaise
2 tbs. lowfat milk
2 tbs. ranch dressing and seasoning mix, such as Hidden Valley

1. Cook pasta according to package directions. Drain and rinse under cool water. Place in a large serving bowl. Add peas, carrots, cheese, and turkey.
2. Mix the mayo, milk, and dressing mix in a small bowl. Pour over the pasta mixture. Stir well to combine.

I would wait until right before you bring it to add the dressing, or let your friends add it when they're ready to eat it. You may not want to use all of the dressing.

Pasta with tomatoes, zucchini, and mozzarella! You can add some chicken if you like. Cook something like penne (you can use barilla plus for more protein). Toss with fresh chopped summer tomatoes, chopped sauteed zucchini, a handful of basil, salt and pepper, some fresh mozzarella, and some olive oil. If you can buy fresh mozz packed in oil and herbs, use this oil for the pasta -yum! Doing this on Monday myself...

I just made this yesterday and it was delicious and easy! I have a 3yr old and a 3mth old so I dont have a lot of time either.

We had left over grilled chicken breasts, so that part was already done. I dont really cook from recipes, more of a throw it together and taste it kind of girl, so you will have to try it yourself too, but here are the ingredients:

Chopped up chicken breasts, bbq sauce, mayo, little bit of diced onion, shredded carrots, almond slices and red seedless grapes. Mix it all up and chill in the fridge! YUMM! I put it over fresh lettuce for a chicken salad salad, but you could serve it on bread too! Or eat it strait! It was a hit with the family and the friends we had over too!

I have the BEST, easiest pasta salad recipe and you can add to it whatever you like...

tricolor rotini
chopped spinach, thawed and drained
Wishbone Italian dressing
crumbled feta cheese

I usually add sundried tomatoes...if I want it to be more of a meal I add chicken....you can even buy a rotisserie chicken, pull it apart and add that chicken to make it easier.

The tricolor rotini is usually sold in a 12oz box so I make a box and a half. We like cheese so I add lots of feta. It tastes better if you make it a day ahead and let the dressing marinate with the pasta...don't use the whole bottle of dressing so you can add more after its been in the fridge. Its great cold or warmed up in the microwave.

Its so simple but really so good...I've been making it for YEARS and its always a favorite.

OMG............. I am hooked on canalope and fat free vanillia ice cream. It is SOOOOOO GOOD!! It a great snack and if you use the rhine when you are done you just throw it away and there is NO DISHES to do!
