What dishes are you looking for?
If you go with gluten free corn bread / corn bread stuffing, gluten free pie crust and gluten free gravy - I can't think what else (turkey, sweet potatoes, green beans, cranberry sauce) would have gluten in it.

No cookbook recommendations, but I make the gluten-free cornbread that my mother then uses to make the dressing. She uses corn starch or gluten-free flour to make the gravy.

Rather than trying to shape a traditional meal around a family member's allergies, how about changing the menu to something that accommodates everyone? Our extended family meals are so easy and stress-free, now that we often have huge pots of homemade soups and bountiful build-your-sandwiches. It's so easy for everyone to customize and enjoy. Just a thought...
