Gluten Free Frozen Desert Ideas

Hi Momas,

My son is gluten free, dye free and chocolate free. I am looking for some desert ideas that are frozen to send to the home daycare he attends for the summer. There are so many birthdays and trying to get a gluten free cupcake each time is pricy and impossible.

We make a good frozen peanut butter pie, which I am going to make and send. But I don;t want him to get burnt out on it so I wanted a few other ideas to mix it up.

The PB pie recpie is.
1/2 cup of peanut butter
1 cup of milk
1 cool wip container
1 plkg of vanilla instant pudding.

Gluten Free grahm cracker crust.

Mix PB and milk, then add the cool wip and pudding. Mix and freeze..

I am not sure how the Gluten Free cupcakes would taste being in the freezer, since they are dry already.

Candace, what donuts do you use? In our school we can not have anything that is not considered "nut"free. My Gluten Free bakery can not delclare their foods Nut free, since there are kids with nut allergy. He is going into kindergarten and his teacher will let me know if his class has any kid that has a peanut allergy and advise me ahead of time if there is a party. They have stopped having the kids bring in treats for birthdays so they will only have a few parties.

MUM4EVER- all desserts are unhealthy- but this would be a replacement for Cupcakes (also unhealthy) We do not eat dessert daily, this is for when my son is looking at 15 other kids eating GLUTEN cupcakes that he can not have.

Those Rice Dream Bars are good.. coated with Carob.. for which I don't normally like, but on the rice bars, it's good.. I like the vanilla with nuts..

You could also do bananas dipped in carob (and nuts) and freeze.. you can buy the sticks at most stores such as whole foods..

that sounds really good. My daughter is gluten free and we had sent in a package of gluten free donuts to her teacher to keep at school for her when other kids have birthdays. Thanks for the recipe :)

ETA: M., I use the Udi's brand donuts that have cinnamon on them. THey are only given to her when there is a party at school, which is maybe once every couple months, so not that often. My kids go to public school and they are not a nut free school. My son eats peanut butter daily there. They have a seperate table for kids with nut allergies.

Mum4ever, no not ALL schools are nut free. I think most are not actually. Maybe private schools are, but I've never heard of public schools being nut free.

There is another question about dyes and such, and one person said that they make up a batch of cupcakes and freeze them. That way, when they need a treat quickly, there are some already made up.

I agree that he might get tired of the same thing over and over, so having a stock of treats would be a good idea... I'm assuming you will have advance notice of a birthday at the daycare? Can you give her a batch of the cupcakes to keep in her freezer for when he needs a treat?

Aren't ALL schoo'sl peanut (nut) free these days?

How about frozen grapes? or fruit kabobs? The stuff you are creating is pretty unhealthy.
