FYI For a Husband Pleasin' Dinner...

So, I grabbed a recipe from the net because I couldnt think on my own tonight, I followed this recipe to the the tee minus the cilantro and the weird ingredient that starts with an M and I added a small can of green chilis to the cheese mixture. Not that I dont already have a good enchilada recipe of my own, but husband seemed like he wanted something a little different than my regular "cheese" fare. This one has ground beef (personally I sill like plain ol' cheese enchiladas), I think this would be WAY better with chicken as the meat, but hamburger is what I had on hand. And normally I make them with red sauce. ... ANYWAY, Husband ate HALF of the baking dish... good grief! So, I thought I would share, since it's simple. But trust me, it's totally not healthy ... so don't dog me for something I already know. I make up for that with breakfast smoothies and my treadmill :). i want to share a hubby favorite... but girlfriend just pulled up.... hopefully i will remember to add :) otherwise feel free to message me :)

added: i remembered to come back:)
I make filet mignon in a frying pan (with just salt/pepper and little olive oil/butter)
Then i used the brown bits (in the pan) and add chopped onions, red wine and butter. I pour this over the filet and homemade mashed potatoes. On a cookie sheet i roast asparagus in olive oil, garlic salt/pepper with little parmesean. The dinner seems hard, but is so easy and is one of my hubbys favorites :)

That does sound good, though I've never heard of malverosa? Where do you find that? I'll try this recipe soon. :)

Jeremy's a healthy man, but his favorite dishes are anything but, lol. (smothered, marinated filet mignon toped with gorgonzola.....or fried catfish topped with crawfish etouffe....or MY country friend steak (he won't eat anyone else's)....stuff like that). Unhealthy recipes are great as long as your lifestyle balances it out. Thanks for the recipe!!!

I love it when a plan comes together! ANytime you find something they eat with gusto is a big check in the win column!

It looks good, although I think you're right about the chicken. I ususally use green sauce with shredded chicken too.

I have a couple of tips. There is a cheap green tomatillo and green chili salsa in the salasa aisle. It's like $1.50 for a huge bottle. It makes a great green sauce and its much cheaper. Better than the can stuff. I mix that with melted cream cheese and mix into it. It is so cravable.

I had never heard of the Malvarosa ingredient, so I tried to look it up. I'm assuming they meant the one that's a spanish cheese, not a geranium-like plant?
I've never tried making beef enchiladas, but that sounds yummy! I like to make enchiladas in smaller single serve baking dishes. In each dish I will make one with onions, peppers, and leftover baked chicken, one with mushrooms and zucchini, and one plain cheese.
