Fresh Tomatoes!

My neighbor came over last night with a basket full of beautiful vine ripe tomatoes and fresh basil from his garden. They look amazing and I want to do something great with them for dinner tomorrow night. Obviously, caprese salad is an option, but I would like to try something a little more "dinner-worthy"!

Ideas and recipes please!

Slice and serve with salt. Chop and mix in a little ricotta and black pepper and serve with pasta. Brush with olive oil and grill. Chop with basil, garlic and olive oil and spread on good toasted bread.

Here are a couple of my favorites:
#1. Grilled chicken sandwiches - Herb foccacia bread, fresh avacado, tomato, bacon & chicken. Slice the bread so that it is about 1/2 an inch thick. Smash the avacado and spread on one slice. Top with grilled chicken, sliced tomatoes & bacon. I also like to add either swiss or provolone!

#2. Spanish rice cassarole - 1 box Zatarain's spanish rice, 1/2 a can of tomato sauce, 1 cup diced fresh tomatoes, 1 lb scrambled beef (cooked) & 1/2 a vidalia onion chopped up fine. Follow the directions on the box, but instead of one whole can, use the half can half fresh tomatoes. Cook the onion with the meat so that it isn't crunchy, but "melts" into the meat. To make it easier, choose a deep pot to fit the meat and everything into so that you have less dishes to clean up. Cook the meat/onion first, then melt the butter, then add the water, tomato sauce, diced tomatoes & box mix. My husband & kids like it that way, but I like to top it off with some mozzerella cheese!

#3. Bruschetta - seed the tomatoes & chop up finely. Thin slice a loaf of french baguette & toast with a little garlic powder. To the tomatoes, add dried basil, minced garlic, sea salt, pepper, fresh grated parmesan reggiano & minced sweet onion. Everything is to taste...but you can also add a little of balsamic vinegar(a little goes a long way!). Top the crostinis with the tomato mixture for a nice appetizer or top with a thin slice of chicken & mixture for a tapas feel!

Olive oil in pan, add minced garlic, add diced tomatos with seeds, add basil, salt and peper to taste. Pour over pasta, eat!

I know this isn't fancy. You all know by now that I. Can't. Cook. LOL

But my absolute favorite favorite favorite food made with fresh garden tomatoes is the classic Tomato and Cheese Sandwich. LOL

Bread toasted, mayo, American cheese, thick slices of juicy tomato, s&p to taste. Man, now my mouth is watering and our tomatoes are still green!!

Stuffed tomatoes also comes to mind...

Jo's idea sounds delicious. And something even I can make! LOL

You can also make salsa or pico de gallo. Fresh tomatoes, green onions, cilantro, jalapenos, lime juice salt & pepper. For sala put in blender for pico just chop up. YUMMY!

I make salsa
tomatoes, garlic, jalapino, onion, lime juice, vinegar , cilantro totally yummy , if you want some heat leave the seeds in the jalapino , if you jsut want flavor scrape them out.

I have to agree with Amanda W; if they're fresh off the vine, it's almost a crime to do anything with them but eat them! But you might try slicing and serving with thin slices of onion or mozzarella and basil leaves and a little olive oil if you feel racy.
Enjoy! My mouth is watering!

Gazpacho! I don't have my recipe on hand but it'll use up a good amount and fresh tomatoes will taste great.

I love to make a sauce that is like a pomodoro sauce. You put some olive oil and garlic in a pan. Saute the garkic then add the tomatoes chopped. Cook for about 20-30 minutes then add the basil along with salt, pepper and any other spices such as oregano etc. And toss with pasta. This is my favorite meal ever and it is healthy ;).

cut up tomatoes litttle pieces add spices and olive oil, Then boil pound of pasta drain mix all together them add cubes of mazzola chesse and parm chesse. chess wil melt yummy

I think caprese salad is totally dinner worthy, especially if the tomatoes and basil are fresh from the garden! You could always put the salad on a ciabatta roll if you need more substance. Sit on your patio with your family/friends and a glass of your favorite wine and enjoy!

You could make scalloped tomatoes. That would use both the tomatoes and basil.

Last night I cut them up with onion and cooked on top of fish and it was fantastic!
