I like the website www.allrecipes.com they have great recipes with ratings and you can save the ones you like to a recipe box.
I am looking for slow cooker (crock pot) or electric skillet recipes to make this summer that are easy and only require a handful of ingredients.
Our apartment gets really hot easily (we live on the 2nd floor) and when we turn the oven on it only makes things worse.
Any recipes would be great. Please also include what setting and length of time to cook.

That is my specialty. I only use the oven for special things like lasagna and baking.
I actually started a blog with some of my favorite crock pot and skillet recipes:

The meatball sub recipe is delicious.
Hi L.,
I don t have time this am to send you a good recipe or 2, but I get inspired by 2 great sites:
go to www.recipezaar.com I like this one even more because you see comments suggestions about the recipe and also how many would make it again or never again!!! it is a great way to learn
or to www.epicurious.com
I like this one because you can have their on line recipe box of recipes you like from that site; I aloso get a weekly or monthly email of recent recipes.
when I use my crock pot, I double or tripe and freeze 2/3 of it for future meals; A large one was just about 25.00 I think; energy wise or heat wise, it makes sense;let me know if you want a few recipes; I would do it when I have time

I love my slow cooker - as your son gets older and has activities you'll love it even more because dinner is thrown together in the morning and ready between activities.
1. Throw a whole chicken in with some barbecue sauce or other spices.
2. Boneless chicken or pork in bottom, cream of mushroom or celery soup next, packaged stuffing on top ( I add some of my own chopped onions, celery & garlic)
3. A London Broil (very inexpensive on sale) with garlic & onion. Thicken gravy when done and have with mashed potatos like a pot roast or shred, add barbeque sauce and have on rolls.
4. stew meat, after cooked add sour cream and serve over egg noodles like a stroganoff
5. stew of course
L.,
I buy beef (eye of the round), chicken, pork (boneless loin) and use my crock pot constantly all year round. Take one of the above meats and place in the crock pot with carrots, potatoes, peas, or any other vegetable you like, add chicken or beef stock and cook away. If you decide to add asparagus or green beans don't place them in until the last 45 minutes as they will get really mushy. A lot of times I will parboil them and toss them in a little while before everything is done, but my family hates it when they get mushy. I also add corn starch at the end as well to thicken the broth. Something else to consider is if you have a gas grill use it all summer. We use ours all year round, especially on Christmas Eve to cook the lobsters. I have learned to get really creative with my grill as well. Hope all of this helps.

Pulled Pork!
Take one pork tenderloin (or two - easy to freeze) and pop it in raw. Cook for a while and add chopped onions and anything else that you'd like. With about an hour to go shread the pork and add one bottle of your favorite BBQ sauce (I like Stubbs). Serve with either mashed sweet potatoes or serve on a crunchy bun with a salad. It freezes really well, too!!
Hi L.: here's a great website for recipes.

Try the Better Homes and Gardens slow cooker cookbook. We love it and live by it as a working mom!
My classic go-to simple recipie for crock pot:
Put in chicken breast and your favorite salsa, cook all day.
Serve with any/all of the following: tortillas, hard rolls, lettuce, sour cream, olives, guacamole, chopped tomatoes, rice, etc................
I can't tell you how good this is! The chicken comes out shredded. I've shared this with tons of friends and they all love it!
Check out the cookbooks - Fix it and Forget it - there are a few different versions of the book but they all have great slow cooker recipes.. I love that there are a few of different versions of the same recipe so you can make things how you like.. good luck!
Hi L.,
I love easy recipes so I am curious to see what ones you find. One of my favorites is a can of tomato soup, can of cream of mushroom soup & a envelope of onion soup mix. Put them in a crock pot & stir it add whatever meat you want. I usually use stew meat but you could do a london broil or flank steak or really anything. Then let it cook on low for 8 hours or so. It makes a wonderful gravy & you can serve it with mashed potatoes or on a roll. Also if there is leftover gravy you can mix it with ground meat for a meatloaf then next night. Good luck
I love my slow cooker! Its so nice to have dinner already done when you get home. There are tons of recipes on the internet and there are some really great cookbooks. I've found some right at the supermarket check outs that call for 3 ingredients or 5 ingredients. Or try the library. You can experiment. I've put chicken breats and cream of mushroom soup in and come home made rice and a veggie and dinners all done! Have fun with it.

Hey L., We are in the same boat and we cook that way all the time...really any meat works, we use chicken (whole) pork roast (shoulder or loin) and beef roast. After you have the meat it is just so easy, add a fluid (water, beer, wine, stock, broth, etc) season the meat any way you like (saly and pepper is fine but I also like garlic powder) and then I just add some veggies. Cook for about 6 hours on med/high. The meat gets so tender from absorbing the fluid and tasty from the flavors you add. (I throw stuff in, whatever I feel like really) so sometimes I do soy/teriyaki sauce, bbq sauce and water, onions, peppers, potatoes, or even rice or pasta all in together. You really can't mess it up as long as you have enough fluid so it does not burn.
