Here are some idea's for alternative meals to cook, here and there:)

1. Love the Pot Roast/potato's in crockpot.

2. pick up a rotessirie at a garage sale. They are the best!!! You've never had chicken until done in a rotesserie yourself!

3. sometimes , once a week, we have "breakfast for supper". Kids love it! French toast and turkey bacon, or reg. bacon if you can eat that. Or eggs, sausage. etc.

4. Sloppy joes is nice with corn on the cob.

5. For kids, try the hotdogs and wrap up in a croissant and bake. (boil hot dogs first. Let cool. wrap in pillsbury croissant and bake accordingly to the croissant)

6. Rice Terriyaki and chicken with steak: Cut pieces of chicken breasts into bites and one steak. put in one inch water and boil. Make rice in seperate pot. When meat is done, drain water, add butter and terriyaki sauce and simmer...keep stirring. Combine into the rice. Quick, easy and good.

7. Porkchops are great! Simmer in an inch of water with sliced onion and pepper for 20 mins, then "fry" in it's juices. Totally tender and delicious. (Use bone-in side cuts. Not boneless.)

8. Grilled chicken salad. Only thing to heat up is the grilled chicken. Next time you grill, make extra and the next night it's grilled chicken salad.

9. Shepherds Pie is easy to make for a different meal.

10. Mashed Potato pizza. Buy a crust. Butter it lightly. Buy prepared mashed potatoes. Spread on the crust all over, like pizza sauce. Sprinkle mozzerella and cheddar cheese and add slices of bacon that you cut up into squares. (like pepperoni) Bake at 325 for 35 minutes.

11. THE BEST AWESOME AND FATTENING RECIPE OF ALL: And this is the best quickie of all. Delicious but I caution you...VERY HIGH in fat and calories. Potato Gnocchi. Buy the frozen ones. In a seperate pan, fry a package of bacon cut up into small squares. Drain WELL. Boil the gnocchi for 3-4 mins, as package directs. Take a large bowl. Drain and rinse gnocchi well. Dump into bowl. dump all the bacon and stir it up. Now add a package of sliced swiss cheese so that it is blended well. and on top. Stick all in microwave to melt the cheese for about 1.5 minutes. It is absolutely delicious and as I said....very high in fat. I tried to modify with fat free swiss and turkey bacon...but it does not taste the same. This is a once a year treat. :)

12. Grilled Ham with a salad is wonderful! Buy the thick sliced.

I'm a working mom so these are "quick" meals. Don't forget the veggies and/or side salads. Hope it helps:)

You can make so much in a slowcooker. With how busy I am, mine is my best friend. Here are some things that you can make:

lasagna
cake
stews
sauces
soups
roasts
meatballs
cocktail weiners
chili
hot cereal

Keilbasa stew is easy to make. Simply slice keilbasa and potatoes and put into slowcooker, fill 2/3 full with water.
If you eat frehs vegetables, slice and put in with the potatoes. From a can? Add about 1/2 hour before serving.

Roasts? Cut up carrots and potatoes and lay on bottom of slowcooker. Place roast on top. Add water tp 2/3 full. Add canned vegetables 1/2 hour before serving.

Stew? Cut up potatoes, carrots, turnip, squash or other tougher veggies and add to a pot with a can of chicken, beef, turkey or veggie stock. Add chopped up meat of choice. Fill 2/3 full with water. 1/2 before serving you can add canned veggies. If adding noodles you will have to expirament. Add 15 to 30 minutes before serving.

You've gotten some great ideas already. I just wanted to add that they sell bags of crock pot ingredients in the freezer section of the grocery store. They are a little pricey, but a huge time saver, I can imagine. I don't personally have a crock pot, so I don't know if they are good, But I was thinking of getting one and could imagine myself buying the pre-made bags when I'm short on time.
Also, stir fry is pretty easy. And, again, you can buy pre-packaged bags if you dont have much time to cut up all the ingredients.
You can get just about any recipe you want online.
Have fun inventing and exploring new meals!

I forget where I got this recipe but it is so so good. You can do it either in a crock pot or stove top, depending on what you are prepared for. It you are doing it in a crock pot, just put all of the ingredients (raw) in and cook on high for 6-8 hours. Otherwise...

1. Cube up 1-2 lbs of chicken breast.
2. Brown the chicken in a large frying pan. I use just a little EVOO.
3. Once chicken is browned, add a bag of frozen stirfry veggies (whatever you like) and a can of cream of celery soup (Healthy Request is great). Stir, cover, and bring the sauce to a simmer.

You can eat it as is or serve it over rice. Tasty, healthy, and fast! I've also tried cream of mushroom, but I liked the celery better.

Hey S.! I don't have a "specific" recipe....but I use a web site called www.allrecipes.com. They have a fantastic search engine which allows you to search recipes for ingredients you want and DO NOT want. Over the weekend I made a Peruvian chicken marinade and a Jays Jerk Chicken marinade. Both were good, but the Jay's Jerk chicken was FANTASTIC! I save a little of the marinade to use later in the week as well. Anyway...the site is easy to use and you can adjust the servings and the ingredients adjust as well....Hope this helps!

You can try grilled pizza. Just get some store bought dough ( or make your own), roll it out, put it on the grill then add sauce, cheese and whatever toppings you like. It's excellent!

My family loves meatball subs... It does use the oven but only for 10 min.. And you can opt out of the oven part if you like... We use the walmart frozen meatballs (great value brand).. Cook the meat balls in your favorite sauce till cooked through.. Take hot dog rolls and put 5 or 6 meat balls in hot dog rolls and top with shredded cheese or a slice of american cheese.. Then put in oven for 5 to 10 min on 350 till cheese melts... Yummy...
Also the great toasted cheese sandwhich with tomato soup or onion soup.. I take and put one bread down with one slice of cheese then add torn up fresh spinich and grated carrots on the cheese and then another slice of cheese before i top with the other slice of bread.. Great way to hide veggies from the kids.. My son hates veggies but loves the cheese and it hides the taste of the veggies.. Good luck and best wishes...

Great question & some GREAT answers. We need to dig out our crockpot.

Anyway - our favorite summertime dinner is taco salad. Cut up hearts of romaine, or use a bag of mixed greens. Toss in leftover chicken, or use Purdue's pre-cooked chicken slices. Add whatever vegetables you happen to have around - peppers, onions, tomatoes, etc. and garnish with salsa, guacamole, shredded cheese & sour cream. Toss with ranch dressing if you wish - I usually find the salsa, etc. is fine for a dressing. Add taco chips & you're done. You can easily choose low-fat options for dairy.

I'm a big fan of easy pasta dishes as well. Find a good Italian pasta cookbook and you can make some tasty dinners with just a few ingredients. Capellini pomodoro, for example: mix diced tomatoes, minced garlic, olive oil, salt, pepper & parsley or basil (dried or fresh) & toss with cooked capellini. Sprinkle with cheese.

Ratatouille (sp?) can also be a good option. Toss a bunch of vegetables together like zucchini, eggplant, summer squash into a pan with onions & garlic sauteed in olive oil. Add a can of diced tomatoes & cook together until slightly thickened. Serve over pasta or rice.

Enjoy!

I picked up a slow cooker recipe booklet at the register at the supermarket that has some great meals. I know its hot thou. I make pasta salad in the morning. Boil pasta and use good seasons salad dressing and stick it in the frig. At dinner time u can have that with tuna on top. Real easy and refreshing on hot days. Fruit salad is nice too.
