I'm starting to plan our Thanksgiving menu, and I thought I would ask if anyone has a favorite holiday recipe that they may want to share!

Corn Bread Stuffing (Southern stuffing)

1 (16 ounce) package dry corn bread mix (not jiffy brand/not any brand with sugar)
2 tablespoons butter
1/2 cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage (or less, try 1 T and add more if desired)
salt and pepper to taste
Directions

Prepare the dry corn bread mix according to package directions. Cool and crumble.
Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

I've just tried butternut squash for the first time and it is my new favorite fruit (veggie?!). I made butternut squash fries and the soup and I love them. Very flavorful and kid/hubby friendly. Plus, it's in season and the color would be perfect for a Thanksgiving table.

Here is the recipe:

Ingredients

* 6 tablespoons chopped onion
* 4 tablespoons butter
* 2 cloves garlic, smashed
* 1 butternut squashed, sliced in half and seeds removed.
* 3 cups chicken broth
* 1/2 teaspoon dried marjoram/orgeno/Italian seasoning mix
* 1/4 teaspoon ground black pepper
* 1/8 teaspoon ground cayenne pepper
* 1 (8 ounce) package cream cheese
* Sour cream to garnish (optional)
* salt & pepper to taste

Directions

1. Season squash with salt and pepper and place face down on a dinner plate, with garlic under each side. Microwave for 5 minutes. Allow to cool a bit and then remove skin and cut into cubes.

2. In a large saucepan, saute onions in butter until tender. Add squash, garlic, broth, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.

3. Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

Yams with Marshmellows is so simple, healthy and yummy. You drain the large can of yams. Mash them up or leave them whole. You can put them in the oven for a few minutes to warm them on 350. Then you can cover the top with small marshmellows & broil to brown the top watching VERY closely.
