So I'm going to set out to make apple crisps in the oven. I thought to also try making fruit leather, and while that is cooking, maybe some apple sauce in the crockpot.

Any other ideas on what to make when cooking at extremely low temperatures for a good long time?

Do you have a prefered recipie for any of the above?

Are you talking about a baked apple recipe with a crispy cookie-like crust on top? We use a very fast, easy recipe, and it calls for ingredients that I woudll imagine most people have on hand.
Choose-a-Fruit Crisp
Ingredients
5 cups sliced, peeled apples, pears, peaches, or apricots; or frozen unsweetened peach slices
2 tablespoons granulated sugar
1/2 cup regular rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground nutmeg, ginger, or cinnamon
1/4 cup butter
1/4 cup chopped nuts or coconut
Vanilla ice cream or light cream (optional)
Directions
For filling, thaw fruit, if frozen. Do not drain. Place fruit in an ungreased 2-quart square baking dish. Stir in the granulated sugar.
For topping, in a mixing bowl combine oats; brown sugar; flour; and nutmeg, ginger, or cinnamon. With a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in nuts or coconut. Sprinkle topping over filling.
Bake in a 375 degree F oven for 30 to 35 minutes (40 minutes for thawed fruit) or until fruit is tender and topping is golden. If desired, serve warm with ice cream or light cream.

I like doing fruit leathers. My DD's favorite is strawberry mango. :)

When I do it, I like to put the finished leather on wax paper, roll it up, and cut 1 inch rolls... So they are essentially healthy fruit roll-ups. (Thank you, Pinterest. Lol.) they are easier to store that way, and more fun for kiddo too.

Another fun thing to do is to leave it flat, and give kiddo food markers and let her draw on it before I roll it up.

As far as apple crisps... In my head, I'm thinking thinly sliced apples that resemble potato chips. I can never get mine to turn out right, so good luck to you if that is what you are trying! If you do manage it, let me know your secret! Lol. (I am highly suspicious that it is my oven jacking them up... I used to be able to bake really well, but in this house I can't even get chocolate chip cookies to turn out right. :/ very annoying. Lol.)

This recipe isn't necessarily for a long, low cook... But it's a decent snack item that is reasonably healthy... (Homemade cheese-its...) I like it, and thought you may be interested. (I just use a pizza cutter to cut them...)

My DIL's mom told me a trick to using real apples in a pie or crisp. You cut them up and put them in a dish and microwave them for about 6 minutes and then you put them in your recipe. This will shorten the time it takes for them to cook.

I don't have any other suggestions as the ones you have are great.

Dried apples or apple crisp? Apple crisp, to me, is basically pie filling topped with a crumb topping. My favorite recipe for apple crisp is from Barefoot Contessa (Ina Garten) - if you google it you'll find it. It uses some citrus in the filling, which really brightens the flavor and adds a nice complexity to it.
