Plan where you will eat in advance and make your reservations. Call a couple weeks in advance and tell them the dietary restrictions. they will take care of the rest. Have a great trip!
I know Disney is supposed to be very allergy friendly. What do I need to do special to make sure my daughter's food allergies are 'accomodated'?

You just need to tell the Cast Member taking your order that you have allergy issues and they will take it from there. Disney is *Amazing* when it comes to catering to people with eating restrictions either due to allergies, religious or personal choices.
Disney is very accommodating to people with allergies, but I will say that it takes a super long time to get your food if you are just going to one of the pickup window restaurants. We wanted to get a quick lunch at a burger stand at Disney World, but because I ordered a milk-free meal for my daughter, it took about 20 minutes for us to get our food after we ordered it. The only thing that was available was a chicken breast sandwich. She ended up not eating it, because it tasted terrible.
We also ordered a milk-free meal at our princess dinner at a nice restaurant. I made arrangements for the dairy-free meal when I made the reservations. When we got our food, guess what it was? It was the same dry chicken breast sandwich that we were served at the burger stand! Needless to say, my daughter didn't eat it.
If you don't want to go to a sit down restaurant, and just want a quick meal, you might want to just bring your own food for your daughter. Disney says that they don't allow outside food, but I brought my own, and they never said anything to me when they were checking my bag at the entrance gate. Good luck to you. You need to make reservations ahead and you'll have to stick to it. This is Disney's website, I would refer to it. Good luck and have fun. My SIL did this with my nephew and Disney was great.
My best friends son has severe food alergies. When she makes the reservation she mentions it as well as when she gets there. In most cases a chef comes out to discuss the meal. My sister is a vegetarian and they were very accomodating to her as well. That's Disney.
You need to let them know when you make reservations, when you arrive, and when you arrive at the restaurant itself. Never feel like you say it too much. My mom has a gluten allergy that they take care of every time we go. She has never had a problem and they are VERY accommodating! Have fun!
