Hi all!
I'm going to a dinner swap with a bunch of other moms. We are supposed to prepare 4 freezable homemade dinners and bring them with us.
I'm not a mom that cooks a lot so I need a good recipe that's easy to prepare:)
Thank you!

What can I do next?

I have some great and easy recipes that you can make and freeze to bring to your party.

1. Turkey Chili - This is the best recipe and it is simple to make, plus, its good for you!
http://www.foodnetwork.com/recipes/food-network-specials/... (freeze after you cook)

2. Crunchy, Oven baked chicken toes - These chicken nuggets are irresistible, you just can't eat one. Once cooked just pop them in your freezer and you'll have healthy chicken nuggets whenever you need them. I usually serve mine with frozen sweet potato fries.

3. Turkey Lasagna - What I love about this is you don't have to cook the noodles! I have tried the no boil lasagna noodles and they never taste right, this trick of putting them in hot water was great! (freeze before you bake)

4. Chicken Enchiladas - Check out this recipe, to make it even easier just buy a pre-cooked rotisserie chicken from your grocery store and save on time and dishes!

Happy Cooking!

I love this baked ziti recipe for a make ahead meal. It's cheap, easy and tasty. http://allrecipes.com/Recipe/Baked-Ziti-I/Detail.aspx It's also my "go to" meal for mommies when they bring home a new baby. It makes quite a bit, I often split the recipe in two for my family of four. Goes great with bread and a salad.

Chicken stuffed shells!

You don't need to use a whole chicken...you can just cook about 8 chicken breast. I made a 9 x 13 pan with 3 large breasts. You could do smaller (8x8) pans. They are yummy! Something with chicken, stuffing, pasta & gravy HAS to be good right? LOL

Lasagna is pretty simple if you use jar sauce....it freezes well. Jacy mentioned crock pot meals..they are also super easy to make. You can find tons of stuff on allrecipes.com for the crock pot.

Sounds like a great idea..

Do the other moms know you can't or don't cook? I'm not sure I would want a meal from s/o not interested in cooking as it would probably just go into the trash. And this would not be a fair trade. Or are they trying to inspire you? I think you also need to know what they are making so there are not a lot of duplicates.

My first recommendation is go to this website: http://www.home-ec101.com/.....it's real food for real people with real lives....her ad. There is an easy, fool proof Ground Beef & Cabbage Skillet dinner that freezes great. My main gripe about these dinner swaps is that the main courses don't have enough vegetable variety. This recipe has cabbage, onion, tomato...and you can add more if you wish.

I would recommend you google Cooks.com or My Sister's kitchen and peruse simple or easy dinners that freeze well and see what sparks your interest as well.
