I am having guests over for a casual dinner tonight and am making homemade chicken pot pie. What kind of sides go with this? Our family would usually eat this with just a salad and serving of fruit, but I would like to do more. I am so unoriginal coming up with side ideas. Would mashed potatoes or rice in addition to a side salad be good or would that be too many starches b/c of the pie crust?

*No there aren't potatoes in it, but that sounds good, how would I do that?

So What Happened?

Thanks all! I think of pot pie as a one dish meal too, so that's why I was stumped. We ended up having a 'jazzed up' salad and fresh peaches,. I would have made more, but ran out of time.

For dessert. it was a simple no-bake cheesecake, that I dressed up with a homemade blackberry chocolate sauce. Yum!

2 c fresh (or frozen, thawed) backberries
2 tb sugar (or to taste)
1 tb orange juice
1/2 cup semi sweet chocolate chips.

Add blueberries to saucepan over medium heat. They will develop a syrup and become a little mushy. Break half up in smaller pieces. Add sugar, chocolate and stir until melted. Add sugar to taste. Drizzle over cheesecake or ice cream.

And yes, the pot pie is easy, though I cheat b/c I use the frozen premade pie crusts.

1 (15 oz) package of 2 pie crusts
1/3 c butter
1/3 c onion, chopped
1/3 c flour
1/2 tsp salt
1/4 tsp pepper
2 cloves garlic (or garlic powder)
1 1/2 c chicken broth
2/3 c milk
3 c shredded chicken or turkey cooked (boiled in garlic/salt and pepper is easy, or use leftovers/rotisserie)
1/2 package frozen peas and carrots
4 celery stalks, chopped

1. Heat oven to 425 degree. Pace one pie crust in bottom of pie pan. Melt butter in medium saucepan over med heat.
2. Add onion, cook till tender. Add flour, salt, pepper, garlic, stir till well blended.
3. Gradually stir in broth and milk, cooking and stirring till bubbly and thickened.
4. Add celery, frozen veggies and shredded meat, cook through a few minutes. You may need to add more flour/broth/milk to make more sauce if needed. I usually add tons of meat/veggies to double the batch to freeze for later, or just to make a really full pot pie).
5. Transfer into uncooked piecrust and top with second pie crust. Seal edges and cut slits in top to vent.
^. Bake 30-40 mins or until crust is golden brown. Let stand 5 minutes.

Pot pie is kind of a one dish meal. How about a jazzed up salad... mixed greens, toasted pecans, sliced pears (I sometimes put the slices in a pan with a little olive oil to brown one side... so yummy), dried cranberry, blue cheese and a vinaigrette.

Or throw together a dessert for afterward and you'll be set.

Don't over think it. Their coming to hang out with YOU they won't miss the side :)

I think a jazzed up salad would be fantastic.
Maybe a berry tart for desert to keep the pie theme

Are there not potatoes in the pot pie? Definitely too much starch if you add another potato or rice. I suggest serving a green vegetable. Perhaps broccoli or spinach or another green leafy vegetable. To cook greens just wash them and put them in a pot to steam. No need to add extra water. I like adding garlic powder to greens. You can also saute them in a bit of olive oil. Perhaps broiled tomato slices with salt, pepper, garlic powder. Something to add color to the plate while not adding starch.

I make those chicken bundles in crescent rolls (so there's the meat and starch too) so I add a salad or another green veggie or something like that.
I think of pot pie as a "O. pot" meal so I wouldn't add potatoes or rice....A big crispy green salad & a great dessert would be just fine!

Add:
salad, a vegetable (steamed zuccinis) and baked biscuits (the kind in a roll).
Done.

That is so funny that you post this! I was seriously about to do that. I am also making Homemade Chicken Pot Pie for dinner and wasnt sure on what to serve as a side. Mine will have potatoes in it. I am adding in a half a cup of them. Thinking about serving salad too but not sure what else. I'll be checking back :)

I love my starches so rice or potatoes would be wonderful for me. Salads are always good. A good option would be a nice salad and a roll or biscuit of some kind.

Sounds delicious! My opinion? I'd love a nice mixed fruit salad with it. I think something opposite the warm/salty of the chicken pot pie would be a nice contrast. I'd probably also serve some kind of dinner roll and butter. For dessert I'd lean toward something like a brownie ala mode; at my house you can't ever get enough of a good brownie!

roasted sweet potatoes

Peel and cut 5ish sweet potatoes into chunks. Mix together 2T olive oil, 2T honey (or maple syrup) and 1 t. lemon juice. Put potatoes on a baking sheet. Pour the mixture over potatoes and toss. Sprinkle with salt and pepper. Bake at 400 for about an hr. Turn them every 15 minutes or so. If they're done before you're ready. Just turn the oven to 200 and leave them! They are so yummy and really no effort.

Well this question showed up in my feed right next to the scrotum question so of course I have to suggest brussel sprouts! Seriously, mashed or mini boiled potatoes would be good as a side along with maybe a zinged up salad with lots of goodies besides lettuce and tomatoes (radishes, bell pepper, etc) Good luck!

I know it is late.. next time consider, fresh green beans, or peas with onions, or steamed carrots with dill..
