Daniel Diet...Ladie's Bible Study

I just recently joined a women's bible study and found out one on our members is on the Daniel diet. I'm not much of a chef and have to prepare a meal for 6 next week. Does anyone have any suggestions on what I should prepare? Any receipes you can share would really help me!

Dear L.,

Call the “ONE” person who is on a diet and ask what she can or cannot eat. People, who are on a specific diet, should not expect her host to entertain around their personal routine. Many who are on diets bring their own food if it is a ridged diet.

Since you are not a cook, you could get two Quiche Loraines from Marie Calendars and make a nice salad with nuts and dried cranberries tossed in along with a great balsamic dressing. (no bread required). Serve ice-tea or the beverage of your choice and assorted fruit for dessert.

I'm assuming this diet means no meats, so how about some sort of vegetable stew with bread or rice, and maybe a tossed green salad and some hummus and pita bread? This is one I got from a friend of mine, I think it was from one of Mollie Katzen's Moosewood cookbooks. She served it with bowls of cashew nuts on the side.
Moroccan Stew
1/3 cup olive oil
3 cups coarsely chopped onions
2 garlic cloves minced or pressed
1 tsp ground cumin
1 tsp turmeric
1/2 tsp cinnamon
1/4 to 1 tsp cayenne
1/2 tsp paprika

1 cup sliced carrots
4 cups cubed sweet potato or butternut squash
3 cups cubed eggplant
1 green pepper sliced in strips
4 cups sliced zucchini or summer squash
2 large tomatoes, chopped
1-1/2 cups cooked garbanzo beans
pinch saffron (optional)
3/4 cup dried currants or 1/2 cup dried raisins
1/4 cup chopped fresh parsley.

Heat olive oil and saute onions for 2-3 minutes. Add garlic and spices, stirring continuously. Add the vegetables in the order listed so that the starchier vegetables cook the longest. Saute after the addition of each vegetable until its color deepens. Stir in the garbanzo beans, the saffron, the currants or raisins. There should be some liquid at the bottom of the pot from cooking the vegetables. However if the stew is dry, add 1/2 cup tomato juice, liquid from the garbanzo beans, or water.
Cover and simmer on low heat until the vegetables are tender. Add the chopped parsley just before serving. Serves 4 to 6

Dear L.,
I hate to tell you this, and I could be wrong, but from what I have heard of the Daniel Diet, it has to do with fasting or refraining from foods. I found the following on a web-site:
Some practical advantages to fasting like Daniel include: re-evaluating your life, identifying with those who are poor, losing weight, worshipping God, breaking bad habits, growing closer to God, family and friends, learning self-control, purifying your body and soul, and repenting of sin.

Caution! The Daniel Fast Diet like any other fast can create problems for people with medical conditions, pregnant, nursing and/or taking medicine. Consult your doctors and/or pharmacist before starting any fast. Ask them about your medication while fasting.

You may want to ask someone in your church if you are to be held to Daniel's Diet because that's what someone else follows, if this is part of bible study, or what.
If the church is standing behind the Daniel's Diet, then I don't think you need to worry much about feeding anyone. And if it's just one person, then bring what you want. I definitely would ask your bible study leader what this is about before you try to comply.

Greetings L.: I have no idea what a Daniel Diet is, is that is out of my scope. I have belonged to many scripture groups so if it has something to do with that -- ya got me--
I am a cook by trade. I can help you with that. But I need more information, or I will over whelm you.
Are you wanting a fish dish? Mexican, Quiche is always good and really inexpensive to make, then serve with a fruit dish, and something like sparking cider or juice. Crepes are another fun thing or roll ups.
If you are not much on cooking try going to a deli and get a tray, or Costco and pick up something that you can heat up.
My fall back is always soup, rolls, cheese, and pie. You can go to several places and even buy decent soups. Olive Garden, Bancherio's, just check with your favorite restraunt.
To enjoy and be comfortable with hosting a party- does not mean that you must spend hours in the kitchen and frazzel yourself. Contact me if you need anymore help. Nana G
