Cooking Question: Cast Iron or Non-stick for Pancakes?

So I like to make pancakes and wanted to try ebelskivers, (Danish pancakes). I prefer to cook, whenever possible, in non-stick pans, like cast iron, stainless steel, etc.. But I want to make really good pancakes, crepes, and ebelskivers. I know that cooking with non=stick is easier for clean up, but I am wary of the chemicals in it. (Remember Teflon?)

So cast iron or non-stick for my delicious pancakes, crepes, and ebelskivers?

So What Happened?

Super great responses. Got the cast iron ebelskiver pan and a lodge pan. It's good to know that I'm not the only one concerned about that non-stick stuff, albeit that electric griddle does sound fun!

I have some great pieces of well seasoned cast iron and I LOVE to cook with cast iron. We have one flat pan that is perfect for pancakes.

I vote cast iron over anything for pancakes. My other pans are the high end stainless All Clad and I LOVE those as well.

A well-seasoned cast iron skillet is the best non-stick pan possible. I don't use pans coated with teflon, calphalon, etc. - it flakes off in your food.
I use cast iron for all sorts of pancakes (regular, corn meal, potato), crepes, and omelets.

Cast Iron.

Pancakes are a great way to reseason cast iron. Just rub your oil of choice into the pan between batches. They slide right out.

Cast iron here, too. I have some that are at least as old as my mother. The longer you have them, the better they perform. I have one small stainless steel frying pan that is really great for steam-poaching eggs. But, I won't cook with aluminum, which kinda sucks, because aluminum heats so evenly it's known for having no "hot spots" even on gas burners. I also won't use any coated non stick pan.

I'd go with cast iron. My stepmom has a cast-iron ebleskiver pan; I make our pancakes in our cast iron skillet. Love that thing. Just make sure you use enough butter/oil and heat it up for a while.

Darn! Now I'm craving some currant-orange pancakes!

BTW, my only non-stick pans are baked-enamel or ceramic. Don't like the stuff they use for most non-stick coatings.

Non stick electric griddle for pancakes. After years of a cast iron, over the gas burners griddle, the electric one is magic. It truly is AMAZING.

For crepes I have a stainless All Clad crepe pan that I use for nothing else.I wipe it out with a paper towel when I am done. NOTHING ever sticks in it.

You need a special pan for ebelskivers with little golf ball sized dents in it. I would check out Sur La Table, I love that place!
The biggest concern with non-stick is when you scratch it. If you use only wood or silicone implements, you should be fine :)

Another vote for cast iron. Too much junk leaking into your food from non stick.
