My 18 month old loves carrots. He tries to eat them raw but they usually turn into a mouthful of mush. I cook them in lots of things and he will eat them before anything else. How could I cook them just by themselves? What are some carrot recipes that your kids love?

Cut them into pieces, and cook them with a little olive oil in a 350 degree oven until they're the softness you like. That way you're not boiling away all the good stuff! Plus cooking them in the oven gives them this awesome sweet taste, and the olive oil is GREAT for babies! :)
My girls love steamed carrots. I use the ziplock steam fresh bags. Once they are steamed I put a little honey (you can use brown sugar) and there you go. I have never used a "savory" kind of recipe for carrots because they are so good sweet. You could check out foodnetwork.com I'm sure they have a ton of recipes.
I used to cut them into big chunks (for chubby fingers) and boil them in chicken stock. Carrot chunks on the tray/plate... chicken stock in the sippy cup.
I make a really simple cooked carrots -- I take baby carrots and cook them in butter with a little bit of brown sugar. It tastes like the glazed carrots at a restaurant.

If he likes carrots you should try cooking some sweet potatoes. Baked or boiled sweet potatoes are excellent for you and taste a LOT like carrots. You can make mashed potatoes with them just like you would white potatoes. I add a little brown sugar instead of salt and pepper. Mmm!

They taste a lot like yams which both of my children love.
Just cut carrot "coins" and steam. If you get them too mushy, that's okay because you can just mash them up. Yummy.
My kids like carrots.....juiced! We run 5 carrots and one Braeburn apple through the juicer for a yummy treat!
i boil them till they are just tender and add a little bit of granular beef bullion. wylers makes a good one. but just about a teaspoon full to the water your boiling the carrots in. it gives them a little bit of flavor. the other way i used to make them was to boil them till tender and add a little bit of butter and brown sugar. yummy but they end up tasting more like thanksgiving sweet potatoes lol.

HONEY CARROTS! Those were the only one's I'd eat when I was younger. Boil the carrots till they are almost done, then add honey (the amount is up to you, depending on how sugary you want them).
I usually just cut up the carrot into sticks and put them in a small pot with some apple juice (maybe a half a cup). Bring to boil, stir, lower the heat to medium and let them "steam" until done. You could add a tiny bit of brown sugar.
