Chicken Salad Recipe Needed

I'm attempting to make chicke salad but the only recipes I can find online call for apples, or grapes, or nuts. I need a recipe where I can omit those items.

2 cups diced cooked chicken
1 hard-boiled egg, finely chopped
1/2 cup chopped celery
1/2 cup chopped onions
1 tbs minced garlic
3 tbs Creole or whole-grain mustard
1 teaspoon Rustic Rub ( I just use some herb flavors)
1/8 freshly ground pepper
1/2 tsp salt
1/2 cup mayo

1. Combine the chicken, egg, celery, and onions.
2. Mix together the garlic, mustard, rub, pepper, salt, and mayo in a serving bowl
3. Add to the chicken mixture and mix well. Regrigerate for at least 1 hour before serving.
4. Serve chilled.

It sounds like a little much but I promise once you make it and eat it you'll never eat another kind of "chicken salad" again. It's a hit everywhere I serve it! Good Luck!

Thats how I make mine and add whatever seasoning I feel like plus mayo. Couldn't you just boil some chicken breast and shred it, add some mayo and alittle salt, pepper, and whatever else your family likes?

Easiest way would be to do small cubed up chicken, mayo, dijon mustard, salt & pepper, and diced celery. that's the way I make mine and everyone seems to enjoy it.

K., I have a recipe for chicken salad that everyone loves! I used to get the sandwiches from Jason's Deli and always loved them - then I started trying to figure out what they had in them. I devised this recipe years ago and it's always a huge hit...and so simple!

2 large cans white chicken meat, drained and shredded
1 small can to 1 large can crushed pineapple or pineapple tidbits - drained and the liquid reserved
1 small bag chopped walnuts or pecans (I like the walnuts)
Mayo

I'm sorry that I can't give you an actual amount on the mayo. I use the squeeze kind and I just squeeze some into the chicken, pineapple & walnuts, stir it, then add more until it's a good consistency. I then add some of the pineapple juice in for extra flavor. On the pineapple - I usually use the small can, but my daughter really loves it with a lot of pineapple in it, so I'll sometimes use most of a large can. It just depends on what you like! I'd start with the small can the first time you make it, though. We usually have it on wheat bolillo rolls from Wal-Mart - sometimes we toast the rolls first and that's really yummy. Best wishes!

I add mayo- depends on the taste
eggs- depends on how much chicken you have
sweet relish or regular relish
