I am looking for a few VERY simple chicken recipes to make for my husband. I am a vegetarian and do not like to cook/prepare meat but am feeling very guilty that I rarely cook for my husband, who does NOT like to eat vegetarian. I am thinking that a few low maintenance and easy recipes would be doable for me (i.e. a chicken breast that I could marinate in a bag). He has fairly simple tastes, but does not like mustard.

My husband is the meat eater of the family also. Here's my super simple roasted chicken recipe that also gets raves from my family:

Preheat oven to 450-degrees
Place chicken piece on a foil-lined baking sheet
Drizzle with olive oil
Season with crushed garlic, tarragon, salt & pepper*
Put in oven and reduce heat to 350-degrees
Cook chicken until done

* This is where you can get wild and crazy with it. Sometimes I squeeze fresh lemon juice on the chicken. Othertimes, I subsitute the tarragon with basil, oregano or whatever spices fit my fancy at that time.

Get three cans of Cream of Mushroom soup with Roasted garlic, 16 oz of sour cream and 4 chicken breasts. Cut chicken breasts in half and sprinkle with paprika. Put everything in a crock pot on low for 6-7 hours (make sure the chicken is covered with the soup. I serve this with mashed potatoes and corn. If it's only for your husband you can cut the recipe in half but I promise he'll love the left overs. The soup/sour cream becomes the gravy for the mashed potatoes. It's so good!

I do super simple chicken dinner all the time, just as a matter of not having time for anything else!!
Saute chicken breast (cut into strips, it cooks faster) in salsa or canned chopped tomatoes with peppers. Then use the chicken to make burritos, tacos, tostadas, etc with whatever other fillings you all like.
Or cook the chicken the same way but with italian spiced tomatoes. Serve over pasta with veggies.
I often cook a big batch of chicken cut into strips with either italian or mexican flavors. I put it in the fridge and then just add some to whatever I am cooking that night.

I like to use the already prepared marinades for my chicken. Italian dressing or Balsamic Vinagrette dressing make great marinades too. Just put the chicken breast (boneless skinless) in a bag, add a little bit of marinade, squeeze all the air out of the bag (VERY IMPORTANT step!), then toss in the fridge for at least an hour. The flavor is better if you do it all day. Then either cook the chicken in the pan in a little Extra Virgin Olive Oil, Canola oil or Italian Dressing. If you don't want to cook it on the stove, grilled, broiled or baked is great too!

I also like to take a little EVOO, add some minced garlic and green onions. Sautee the garlic and onions, add the chicken breast (sort of dredge each side in the sauteed onions and garlic so there's some on each side).

For a breaded baked chicken, I like Panko bread crumbs. I like to dredge my chicken in honey mustard, then roll in the bread crumbs. If he doesn't like that, you can use BBQ sauce or a beaten egg with a little milk. Just bake it in the oven.

Chicken is one of the easiest meats to cook. I'm not a fan of touching raw meat (and I'm a meat eater), so I always try to use a fork to handle the meat.

Dice up a few chicken breasts into bite sized pieces, saute them in a little olive oil in a deep skillet. Nuke a bag of frozen mixed veggies and add them to the skillet. Add a large can of cream of chicken soup, add water or milk to reach a desired consistency. You can serve it this way or if the sauce is a little soupy you can drop spoon fulls of Bisquick batter (I use butter milk) then cook 10 min uncovered and 10 min covered to make chicken and dumplings. My whole family loves this.

Hi W.,

I am a former vegetarian (only started eating meat when I got pregnant 2 years ago) and am still very squeamish about handling raw chicken. One thing my husband does to help me is when chicken goes on sale, we buy a lot of it, then cook it (by baking or steaming), cube it and freeze it. That way you can just throw it in casseroles and stirfrys and don't really have to handle it too much.

I hate handling raw chicken! I buy the IFF breasts or tenderloins in the bag, frozen.
Put a few in a dish & defrost, blot with paper towel.
Place in and 8x8 glass pan.
Pour cream of celery or cream of mushroom soup on each piece (about 2T per piece), prepare stuffing with hot water & butter and top each piece with a payer of stuffing. Bake at 350 for about 40 minutes or until chicken is cooked. You can freeze each breast seperately after it's done so he can have O. every so often.
