I have a wonderful chicken ANC dumplings recipe. But my dumplings boil away. I hand roll and cut them. Any suggestions?

So What Happened?

Well... I did cook them for a much shorter time and they were fantastic! To those who wanted my dumplings recipe here goes:
Take 4 pieces of bacon and fry them in a heavy bottomed stewing pan. Take out bacon and crush. Set aside.'. Also set aside 2 Tablespoons bacon grease. There should be some bacon grease left in pan.' in this sweat 1/2 purple or yellow onion chopped. 5 celery stalks on this recipe I meant to say cream of chicken instead of chicken mushroom that u will see further down.
With leaves finely chopped. And a pound of matchstick carrots. Once they are slightly softened, take
Them out and set aside. Next take a whole cut up chicken with most of skin removed and place in pan.

To that add 2 large cans chicken broth , 1
Large can chicken mushroom, and 3'tablespoons black pepper. Boil chicken until easily remove from bone. Pull chicken out debone shred or cut chicken prices and place back in. Also add celery carrots and onions. Replace lid and leave on low simmer. For dumplings 3'cups self rising flour, cut in 1/3 cup lard and 2 Tablespoons bacon grease from earlier. Add 2 tablespoons poultry seasoning.'. Then add 1 cup very cold milk slowly, cutting in as you go. Powder your counter. Take your dough ball and powdered rolling pin and smooth out to approx 1/4 inch thickness. Cut into small even squares. Once all cut drop quickly into simmering pot for appro 20 mins or until done. You taste them. Simmer should be high at first when dropping in dumplings. Good luck! You guys are

I use Bisquick.
I make the biscuit recipe on the box but use buttermilk (makes them more fluffy), then drop (spoon sized drops) the batter/dough into the pot 20 min before the end.
Cook uncovered 10 min, then cook another 10 min with the lid on.
My husband likes these better way more than the way his Mom use to make them.

I make biscuit dough, and mix herbs and spices into it. Instead of rolling them out and cutting them, I drop them by spoonfuls. A little of the outside boils away and thickens the gravy, but the rest of the dumplings stay intact.

another bisquick user here. just follow the directions and yum! I do throw in some dried thyme or parsley to make the dumplings a little more fragrant.

You cant overcook them or they will dissolve. Try some different dumpling recipes. I havent made the homemade ones in a long while, I usually use bisquick.... and I know bisquick ones will dissolve if you dont pull em off the heat on time. Egg and flour dumplings are so delicious, my grandma used to make them and homemade noodles from the same recipe... they were SO DELICIOUS!

Knead the dough longer to make it firmer. Then, cut them slightly larger. I usually make mine just smaller than golf balls, but I cut them with a wooden spoon as they cook.

I never do the roll and cut dumplings. I scoop and drop and they come out light and fluffy and melt in the mouth not in the broth. Super easy too. 2 cups of flour, 2 ( yes 2) tbs baking powder, 1 cup of warmed milk ( 1 min the microwave will do just fine) 3 tbs of either chicken fat ( no really it works and is tasty) or canola oil. Combine and scoop the batter with soup spoon into the simmering broth. Cover and let simmer for 20 min.

You are over cooking them, they only need to cook a very few minutes until they are cooked and not doughy.

depends on what you are using for dumplings. easiest thing is to take regular biscuits and just quarter them and boil them. make sure and use the plain ones, not the ones coated in butter or it turns the water kind of yellow and i dont like the way they taste. they will puff up big, just make sure and stir them and dunk them all down in the water. easiest thing is to make the whole dish in a crock pot.
