We are going to the mountains this weekend and really roughing it. Just good ol mountain camping. I was wondering if anyone had any really good easy camping recipes that the entire family would enjoy. I have a two burner stove, a skillet and two sauce pans. Thats about it. I know food always tastes better when your camping but I really want something that will become a favorite when camping.

I'm sort of lazy when it comes to food and camping. We usually have instant oatmeal, Tang, and hot chocolate for breakfast. We're hardly ever camping just for the sake of camping, though. We're usually trying to get out and do something in the area--KOA's are our alternative to hotels!
I also take box or pouch meals. I look for the kind that just require water or milk. Then I take powdered milk and add water. We often do Velveeta macaroni and cheese, or shells 'n cheese or whatever. We've also made those boxes of au gratin potatoes or hamburger helper-type dishes. We often only have refrigeration the first day, so that's when we use our meat. Everything else is strictly non-refrigerated.
An idea from my husband's backpacking trips is burritos. You can buy dehydrated refried beans that you just mix with boiling water, and tortillas are good travelers. If you have refrigeration, add some cheese, and get some Taco Bell packets and a side of spanish rice. He also likes to make pudding in a baggie for dessert. You split the pudding mix into 4 baggies, then (it takes a little math) put in enough powdered milk and write on the baggie how much water to add. Then when it's time to make it, add the water and everyone has to squish their pudding baggie for a few minutes to make their own pudding.
A camping tradition in my family was mint oreos (called grasshoppers back then). It's not so much that they're camping essentials as we always had them, so when I see them, I want to go camping! I guess consistency is the main factor in establishing traditions.
Dutch ovens open up a whole new realm of possibilities.

For your eggs I learned a great trick! Instead of having to fight not breaking them extra... Put them in a container that seals well, I mean just the egg not the shell ;) Then you can add cheeze and seasoning what ever you want.. the kids can shake the container to mix. Love that trick! Also, my Mom always made what she called foil dinners. You can pre make and bring them as well, and mix the ingredants around till it fits your family..but heres what we do.. Individual foils, a hamburger patti, and veggys. (potatos,corn,greenbeans something like that) put in some seasoning it you like. Wrap em up and bring them ~ everyone has there own little meal :)

Well, there is the old stand by of smores but that will only get you your snacks. We also love to do the Hobo dinners. Take some tinfoil and inside wrap a hamburger patty with potatoes and carrots, onions and whatever else your kiddos will eat that goes and then cook over the coals of the campfire. For breakfast you can do cinnamon rolls---camping style of course. Take some refrigerated biscuits(just buttermilk are fine) and roll them around a roasting stick, roast over the fire and then when they are done spread butter on it and sprinkle some cinnamon on it and there you go. These are always favorites with my crew.

we love hot dog soup. Ramen noodles and cut up hot dogs (we use Morningstar to make it a little healthier). We also only use 1/2 the seasoning packet to cut back on the salt.
we also do tacos. refried beans heated up and you're good to go. If you insist on meat, make it at home, freeze it and all you need to do is heat it up.
grilled cheese is another favorite.
we do lots of canned veggies and canned fruits instead of fresh when camping. that way we don't worry about prep or bruising.
we always do pancakes the last morning w/a bought mix. Then, 'cause its the last morning, we throw all the dishes in a king soopers bag and deal w/the sticky mess at home in the dishwasher.
