Cake Recipe (Preferably a Healthier Version)

My son's birthday is coming up next month and I am planning on decorating a cake for his party. As we are working on eating healthier, I am wanting to find a tasty cake recipe that isn't quite so loaded with fat and sugar. Do any of you ladies have a recipe that you like?
Also, what about icing? Is there any way to reduce the sugar? I usually make a cream cheese icing, but it is loaded with powdered sugar?
Any help that you can give me would be wonderful! Thanks!

Hi. I also wanted a healthier cake, particularly for my son's first Birthday, as we weren't giving him much sugar or desserts at that point. I found a good recipe on this wholesome baby food website that we all liked: http://www.wholesomebabyfood.com/tipFirstBDay.htm
I believe it was the applesauce spice cake.

but I left out the nuts & added chocolate chips.

How about a jello cake? All you do is take a regular white cake mix and bake it according to directions then let it cool and take a package of jello mixed with a cup of boiling water poke holes in the cake and pour the jello mix in. Put it in the fridge and then top it with cool whip. It is a really moist cake and pretty too! You could then decorate the top of the cake! Good Luck

It seems like the Sneaky Chef books have a cake and icing recipe. You can check them out at your library, I would think. I have had pretty good luck with her recipes. Good luck!

I LOVE a white cake (double layer) with cool whip (in the platic tub container not the spray bottle) with fresh sliced strawberries! Its like a big strawberry shortcake! A LOT less sugar and fat! :) I'm actually making one for Vday for our playdate party! Good luck!

I don't have a specific recipe, but I know I've had cakes (and brownies) in the past when friends have substituted oil with applesauce.

My all-time favorite vegan chocolate cake recipe, but it does use sugar. It cuts alot of calories and cholesterol by not using eggs or milk. How about a carrot cake? My grandmother makes banana bread/muffins with shredded zucchini in it...why couldn't that be made into a cake, then frosted? Depending on the age of the kids, they'd have no idea.

Angel food cake with strawberries and a lite whipped cream. I don't know if you can avoid a lot of the sugar, but you can avoid a lot of the fat.

A healthier and tasty cake that we like is made with an angel food cake mix (dry) and a can of crushed pineapple. Just mix them together (including the juice from the pineapple), with no other ingredients. Bake at 350. I forget how long...probably follow directions on cake box. It is really yummy. For "frosting", you can use Light Cool Whip. Yum..I think I will make this tomorrow!
Also, I just remembered another idea...haven't tried this one yet. Mix a can of soda pop (any flavor, can use diet for less sugar) with any flavor dry cake mix. Same as above, mix just those ingredients and bake. I have heard of colas, Cherry cola, Dr. Pepper used with chocolate cakes. Orange, cherry, or sprite used with white or yellow cake.

Deceptively Delicious has a couple cake recipes that are healthier (one of them has pumpkin added, but you can't taste the pumpkin). However, if you are making a cake from scratch, simply reduce the sugar, and no one will know. Pillsbury has reduced sugar cake mixes, which uses splenda. Also, if you want to still do a frosting, again just reduce the sugar from a recipe, or serve the cake with thawed mixed frozen berries instead of frosting.

You can cut the sugar to half a cup and it will still taste great! Make sure you follow the directions exactly and you shouldn't have any problems. I won't buy a store bought mix again after finding this recipe.

How about icing it with homemade whipped cream? It will have powdered sugar, but you'll save a lot of calories not using cream cheese. You can find a recipe online and it takes literally 5 minutes to do in a stand mixer. It's basically powdered sugar, heavy whipping cream, and vanilla. Just look up the amounts. Homemade whipped cream also doesn't have the high fructose corn syrup and other chemicals like you find in cool whip or store bought whipped cream. And it tastes soooooooooo good! =)
