This peanut butter cookie recipe comes from my husband's grandmother's 1952 Joy of Cooking Cookbook and they are delicious, rich, and crumbly!
Sift:
1/2 cup brown sugar
1/2 cup granulated sugar
Beat until soft:
1/2 cup butter
Add the sugar gradually and blend these ingredients until they are creamy.
Beat in:
1 egg
1 cup peanut butter
1/2 teaspoon salt
1/2 teaspoon soda
Sift before measuring:
1 1/2 cups all-purpose flour
Add the flour to the batter and:
1/2 teaspoon vanilla
Roll the dough into small balls. Place them on a greased tin. Press them flat with a fork. Bake them in a moderate oven 375 degrees for about 15 minutes.

Hi A.! This recipe is quick, simple, and absolutely delicious.
1 cup peanut butter
1 cup sugar
1 egg
1 tsp. vanilla
Mix all ingredients by hand (wooden spoon works best)until all ingredients are well blended. Roll into balls and place on ungreased cookie sheet. Press with a fork, if desired. Bake at 350 degrees until edges are golden brown. These are sure to be a favorite.

NEIMAN-MARCUS COOKIES
This isn't for peanut butter cookies, but for the Neiman Marcus chocolate chip cookies.. They are yummy!!! They sell this recipe for $250.00 in their store what a riff off! Enjoy the recipe.
(Recipe may be halved)
2 cups butter
24 oz chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine
powder. Cream the butter and both sugars. Add eggs
and vanilla, mix together with flour, oatmeal, salt,
baking powder, and soda. Add chocolate chips,
Hershey Bar, and nuts. Roll into balls, and place
two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees. Makes 112 cookies.

But cut back on the sugar in the filling. It's made a bit too sweet in the recipie. You can also substitute the oatmeal with rice crispies if you want a bit of crunch. It dosn't ruin the softness any.

Hi A., I am an older mom and have had several years to perfect my cookies. It is usually not so much the recipes as it is the amount of time you bake them. If the instructions tell you to bake them from 8-10 mins, do eight mins first. Let them sit for a minute or two before removing them from the baking sheet. I am famous for my soft chocolate chip cookies. Good luck.
