I need to go grocery shopping today. So I need to come up with my menu for the week. I feel like we have been having the same things over and over lately. I need some inspiration! So what did you have last night or what's on the menu for tonight???

IT always dependes on what's for sale. Some ideas for summer dinners:
chicken kebobs (marinte the chicken in jsut about anything then put them on skewers with or without veggies - the kids done't care they just like eating stuff on sticks)
pork tenderloin on the grill. Use a spice rub on the outside, then sear on the grill on all sides. Turn the grill to really low, close and then turn every 5-8 minutes. But BBQ sauce, or sweet & sour sauce on the outside, and serve with rice or couscous.
BBQ beef or pork - if a pot roast or pork roast is on sale toss it in the crock pot in the morning with BBQ sauce, water, grated onion (yes, use a cheese grater!) and some garlic and other favorite spices. Keep turning it over as the day goes by. By dinner it should be shredded. Serve on burger rolls.
fish on the grill of any type) is delicous too. Use heavy alum foil on the grill if it's a fish that will fall apart. Dice tomatoes, onion, fruite like peaches, add some cilantro and serve that (or salsa) on the side with rice and veggies.

I love grill cooking - you can even grill large mushrooms, tomatoes, zucchini, asparagus, etc. I use vegtable oil spray on the veggies, sprinkle with onion or garlic powder, salt & pepper and grill away.

Friday night was homemade vegetable soup that I made from leftover beef roast. yummmm
Saturay night we ate at my parents which was Lowcountry stew (shrimp, smoked sausage, corn on the cob and potatoes).
Last night was bacon and egg sandwiches. (Was supposed to be BLT's but couldn't find any good, fresh "t" for it)
Tonight is leftover soup.
Rest of the week: baked ziti with pepperoni's in it; BBQ ribs on the 4th; tacos/nachos; and I have chicken breast in the freezer but no idea what I'm going to do with it yet. Chicken pot pie?

I don't use the oven at all in the summer, its way too hot here. Last night I made spaghetti, which I haven't made in a long time. I haven't thought far enough to know what Im making tonight. LOL!! Why don't you make tostadas? You just buy the premade shells, a can of refried beans, shredded cheese and lettuce, add some salsa/hot sauce and there you go! Its basically no cook except for heating the beans. So easy and my hubs and the kids LOVE them.

lol, my anal husband plans a menu for the month, BUt since he never makes it home for dinner we never follow it.

tonight i might actually make grilled chicken salad.

last night I made garlic lime chicken. Super easy. Just cut the chicken into cubes, cook it on the stove top with a little bit of oil, add fresh garlic and half the juice of a lime. Once it's all done squeeze the other half of the lime onto it and it's done.
Tonight we are having chicken tacos. I cook the chicken in the crock pot, shred it up, and make a taco with it.
Both are super easy and good :)

It is finally hot here so we are having cold food lately (my favorite) so...

Last night we had:
Veggie Pizza
A pre-made pizza crust (like Bobolli) and spread a layer of cream cheese for the sauce and then add some shredded cheese and your favorite veggies, we had shredded carrots & cucumbers, black olives, sliced tomato and avocado and salt & pepper to taste. So Yummy and no cooking required!

Tonights dinner:
Roast beef bagels and cream cheese & a salad and some fruit.

Toasted bagel, w/cream cheese, and sliced Roast Beef from the deli at the grocery store and salt and pepper!
Add a salad and some fruit and your golden!

I love, love, love the cold food that requires no cooking!

Last night we had grilled burgers. Tonight it'll be BLT's. I have my fiancee make the bacon in the oven in the morning so it doesn't heat up the house in the afternoon.

Since it is to be so hot here all week, this is what we planned. We like to keep our central air at a cool 66* , keep shades closed, not use the oven, conserve time with the laundry appliances, lights off, etc. Eliminate anything that generates alot of heat so we can stay chilly as we like!

Last night we made subs at home...roast beef, pastrami, ham, corned beef, lettuce, tomatoes, onion, a few kinds of cheese and sprouts (and now have the leftovers for lunches and what not for a few more sandwiches).

We have leftover taco meat from my daughters grad party a few weekends ago that we froze, so we will do taco salads...only need to microwave the meat, the rest is cold stuff so no heating the house up in this 90*-100* temps.

We have a pack of chicken breasts marinating in our fave Italian bottled dressing to be grilled then added to some packaged Caesar salad mixes one night (again, no house heating).

We will do burgers on the grill on the 4th with some veggies and fruit.

I will make sloppy joes. They require some stove top cooking of the meat, but then I will stick them in a smaller crock pot for the remaining cooking and keeping warm. Some pasta salad we purchased already will go nicely with it..

Tomorrow my teenager takes me to the orthopedic doc to get my broken foot xray'ed again, then we are seeing a movie together and getting home later. Hubby is on his own for dinner so he will either grab take out or order a pizza, depending on what time hes off work!

I thought we did pretty good!

Tonight is stuffed French toast. For the rest of the week it’ll be ribs with pasta salad, chicken paninis with roasted potatoes, pork tenderloin with mushroom sauce and mashed potatoes, and baked chicken tenders with tater T.. Fruit will be with every meal to round things out. Yippee for summer and fresh fruit.

Saturday was a bone in prime filet, baked potatoes and creamed spinach

Sunday was pulled pork, baked beans, slaw and fresh tomatoes

Today (unless we end up eating pulled pork leftovers) will be pan fried fish, slaw and fresh tomatoes.

We do a lot of eating out as well, love Grimaldi's pizza, the 4th will be at the country club and watching fireworks.

We had spaghetti last night, so we will have left-overs sometime this week.

Monday night is cereal night. :)

Tomorrow I'm grilling a bunch of chicken. I'll use some of it for white pizza (whole grain pizza bread, alfredo sauce, chicken, basil, oregano, salt, pepper, jalapenos, and mozzarella cheese).

Then I'll use some of the chicken with some sort of pasta, and my husband will use the rest to put on his salads at lunch.

Last night shrimp in pesto sauce served on pasta with arugula. A side of brussel sprouts. Tonight grilled salmon with a spicy rub, salad (arugula, red onion, feta and watermelon salad) and slices of watermelon. Maybe rice for the kids too.

Last night we has chicken tacos. I put 6 chicken breast in the crock pot with a packet of taco seasoning and a bottle of mild hot sauce. When it is done(4-6hrs on high) it will just fall apart. I even "shreaded" it in the crock pot right in the crock pot with my tongs. Use your favorite tacos toppings and your good to go. I like squeezing limes on mine. It is SO easy and really good. The in-laws are in town and they raved about it. The night before we had grilled salmon we cooked on cedar planks. With a side salad they are great. Good luck!!
