Struggling with Supper

Hi Mom's,

I have two boys (17 months and 3 years) and I am currently pregnant with #3 (due Nov. 16). I am SO TIRED of cooking the same food for dinner. I really struggle at that time of day because I have not been feeling that great, and am usually running out of steam by then. If I eat spaghetti again I may lose my mind. I am wondering if you guys have any healthy kid friendly meals that you like to serve your families?

My kids like the usual meals... spaghetti, tacos, baked chicken, ham. They both like rice, and will sometimes eat potatoes. My 3 year old is a great vegetable eater (the 17 month old doesn't really like vegi's so I give him a vitamin and sneak them to him when I can).

I am not really a packaged meal cooker, when I look at the ingredients it always makes me put them back on the shelf, as much as I'd like the convenience of a "Hamburger Helper" type meal.

What do you guys like to cook? Links to websites, or recipes or just good ideas are greatly appreciated. I am desperate for some new ideas, especially for some good summer time fast meal ideas.

Stir-fry is super easy. I chop up chicken breast and fry it in a skillet. When the chicken is close to being done, I add a bag of frozen veggies, and sprinkle some lemon pepper seasoning on it all. Boil a pot of rice, and you've got supper.

Crock pots are AWESOME. I throw a hunk of meat, some potatoes, and some veggies in there and let it cook on low all day.

Eggs make a quick and easy meal. Scramble a big pan of eggs and sprinkle some cheese and leftover meat (ham or bacon) on it all.

www.SavingDinner.com is a great website with all different ideas & tons of recipes. I have used a few recipes & they are actually pretty simple & my kids liked it.

I feel you... but I only have one (a 2 year old daughter) so you have mouths to think about.

The meals that I make and my daughter will also eat are:
*homemade baked chicken nuggets (cut up chick breasts, dip in low fat ranch dressing, then dip in breading crumbs, put on baking sheet and cook for 15 mins at 400).

*Pork Chops (coating:1/2c flour, 1 1/2cs bread crumbs, 1 tsp dried rosemary, 1 tsp paprika, 1/4 tsp onion powder... or just coat in bread crumbs... cook over med heat in oiled pan, 4 mins per side)

*homemade cheese pizza (I buy the dough mix that you just add water too, mozzarella cheese, pizza sauce... roll out pizza crust and bake for 5 mins... take out of oven and top with rest of toppings and cook for 12 mins or until it looks done)

*tater tot casserole (32 oz bag frozen tater tots, 1 lb gr beef browned, 2 cans green beans drained, 1 can cream of mushroom soupm 1/4 c milk, 1 Tbsp dried onions... combine all ingredients but tater tots. Mix well and top with tater tots. Bake at 350 fpr 40 mins).

*Slow Cooker Ham & Potatoes (2-3 lb boneless ham, 8 med red potatoes cut into cubes/chunks, 1/2 c brown sugar, 1 tsp dry mustard... Put potatoes in first, place ham on top of potatoes then crumble brown sugar over ham. Sprinkle with mustard... cook on LOW 10 hrs).

*Salsa mac & gr Turkey (1 lb gr turkey browned, 1 can beef broth, 1 1/3 c water, 2 cups med pasta cooked... cook pasta in beef broth and water. Brown gr turkey, add soup and salsa. Stir in pasta and heat 10 mins). I use mild salsa but could be done with medium or hot.

*Taco Turkey Wraps (2/3 c sour cream, 2 Tbsp taco seasoning, 6 flour tortillas, 1c shredded Mexican cheese, 1/2 lb thinly sliced deli turkey, salsa... Combine sour cream & taco seasoning. Spread over tortillas. Sprinkle w/cheese and top w/turkey. Roll-up.)

*Grilled cheese... could add various meats and tomatoes to yours for a more 'grown-up' take.

*Shrimp Bowl (3/4 c rice, 1 c plus 2 Tbsp water, 1/4 tsp salt, 1 Tbsp veggie oil, 2 c frozen stir fry veggies, 1 (12 oz) package cooked baby shrimp, sweet & sour sauce to taste (I skip), 1 tsp soy sauce... combine rice, water & salt and cook with lid on. Reduce heat to low; cover and cook 15 mins or until rice is tender. Set aside. Heat veggies in oil over med-high heat for 3 mins. Stir in shrimp, sweet & sour sauce, and soy sauce. Heat through and serve!)

Hope you can use some of these to mix up your meal order and bring you a variety... Also if I want something I know my kids won't eat (like steak) I cook it for my hubby & I and make mac & cheese for my daughter. That way I get the big variety I like.

i like campbells and kraft foods websites...most of the stuff you may have on hand or it is simple stuff you can buy at the store...i make a lot of hotdishes for my kids (3 and 6) and they always seem to like them. how about home made pizza?? you can buy the pizza buy already pre-cooked and then you can let the kids pick their own topping..and instead of spag i make a hotdish with tomato soup, noodle and hamburger (a little bit of a change), will they eat fish sticks and mashed potatoes (i buy boxed potatoes that you only need to add water), i also make chicken/hamburger with asian stir fry veges (cub brand in the freezer section) and add to lipton noodles or rice...they dont even realize how much veg they are eating! have you tried tuna hotdish?? my kids eat that too..i do buy the hamburger helper tuna mix, but add frozen peas (they dont notice this either)

one tip, when you are making a hotdish make more than you need...that way you have lunch for the next day and all you need to do is microwave it!!

My kids like fried potatoes(with olive oil). I wash the potatoes & cube them with the skins on- added couple of tsps of olive oil to pan with a liitle water to steam cook them. add seasoning if desired- when they are fully cooked
(covered) turn off & sprinkle cheese of your choice.
This goes well with pork chops, chicken Etc. - Also check out Kraft.com -they have some good quick & easy meals with stuff you may already have in you kitchen- happy eating!

taste of home website has some great idea's.

one meal i like to make when i don't feel like cooking is beef strognoff. boil some egg noodles. i buy the stew meat so it's cut up already and will cut some of the bigger pieces down. cook the stew meat and some onions with a little butter (takes about 5-10 mins) then mix in the same pan a can of cream of mush. soup and some sour cream until its creamy and some salt, pepper and little garlic powder mix it together with the noodles and its done with in 15 mins.

for baked chicken i will mix can of cream of chicken, a little milk some mixed or calf. veggies and rice put the chicken in it and bake until chick is done. i sprinkle some shredded cheese on the top and bake until the cheese melted. hides the veggies for the little one.

shepard's pie is another quick one. brown hamburger mix in green beans, a can of chopped tomatoes (juice and all) top with instant potatoes (they work better than real ones for some reason) place slices of cheese on top of the potatoes (i like velveeta the best but any works) and cover it until the cheese is melted. takes about 15-20 mins start to finish.

chicken alfredo~ you can buy the jar's of alfredo sauce, i usually use one jar of that and mix in a package of cream cheese (gives it more taste) cube up the baked chicken add veggies and spaghetti noodels. add spices to your taste.

another one the kids like is, cube baked chicken add the garlic aflredo sauce add cherry tomatoes and medium shells and its done.

spare ribs, put it in the crock pot in the morning on low add the bbq sauce then and let it cook all day. before its done make baked beans or something to go with it.

roast in the crock pot mixed with potatoes and carrots add some water and let it cook all day.

ring bologna ~ boil for about 10-15 mins (its already cooked so it just needs heated up) what ever side you choose. my kids like "dirty" potatoes with it.. potatoes, mushrooms, onions and peppers (when i feel like it bacon) splash a little oil on it and bake in a cake pan for about 30 mins until the pot. are tender. you can even do it in a frying pan, it doesn't take as long.

chicken chow mein~ cook the chicken and dice it up. buy the can of sweet and sour chicken, mix it all together and heat it up, serve it over rice. if you don't want it pre mixed out of a can you can buy the bamboo shoots, water crests, chunk pineapple, sheredded carrots and boil pineapple juice and add corn starch stir until its as thick as you like it.

we also will have "snack night" once or twice a month where i will make one of these
~pigs in a blanket,
~blt hot dogs ( wrap the hot dogs with bacon bake for about 40 mins, then on the bun add tomatoes and lettuce),
~nacho pinwheels ( buy crossant dough in the tube, spread out the intire roll pinching the seams together, in a bowl mix taco seasoning, shredded cheese and cream cheese spread onto the dough and roll it up into a log, with a string cut into 1/2in slices and bake as directed serve with some salsa)
~bagle pizza's one half of the bagel they spread the pizza sauce and put on their toppings and bake until the cheese is melted
~sloppy joes or cheese burgers and french fries
then simple sides like chips, apple sauce, canned fruit, something simple that pretty much just has to get opened and served no cooking with it. this is when i also will make a cake, brownies or cookies durning the day or they will get ice cream, kinda like get the "junk" meal all done at once since they don't get things like this very often.

my kids even like grilled cheese sand. and tomato soup all year.

stuffed tomatoes, peppers or mushroom are another idea and the kids can help stuff them.

really any meat you can cook in a crock pot.. add a little water cook on low and they are usually so tender and juicy and will fall off the bones. plus you can start it in the morning when your not sick and it will be done at night so you don't have to spend alot of time in the kitchen. its horrible to cook when your not feeling well!

Anyway, I'm with Charity O. I like Kraft Foods. I don't think she mentioned that you can sign up for a free magazine from them. I think they send it once a quarter. I love to see what they have in the mag each time. It's great for the whole family.
