For Father's Day gathering (of family) I am charge of the desserts this year. Does anyone have any relatively easy but super scrumptuous and delicious recipes they would use on family. I don't mind something challenging, but prefer with a toddler in the house, to minimize my time in the kitchen if at all possible. I need two recipes....so anyone out there have any favorites that are a hit for family celebrations?

Chocolate Trifle

Super easy. Bake a chocolate cake in a 13 X 9 pan. While the cake is baking make chocolate or white chocolate pudding. when cake and pudding are cool layer them in a glass trifle or other pretty bowl with canned cherries and whipped cream. I layer cake then pudding, cherries, and cool whip repeat for 2 layers.

1 Large bag of frozen fruit (Peaches or Mixed Berries are what I like best)

1 Box Jiffy yellow cake mix (HAS to be the box of Jiffy)

1 Can sprite

Place fruit in cassarole dish. Sprinkle with sugar (if using peaches I like to sprinkle with cinnamon too)

Then evenly top with the box of cake mix

Pour the can of sprite evenly over top of mixture

bake at 425 for about 20 minutes or until golden brown and bubbly

Let cool to thinken some. GREAT when served warm topped with Vanilla ice cream. mmmmmmmmm :)

NOTE: Does not come out very well when doubled so if you want more than what one batch makes I would put them into 2 different baking dishes. :)

This recipe might appear to be complicated but it really isn't, i just made it again yesterday while juggling my 7 month old. Also this bread is even better the next day so you can make it ahead if you like! It's lowfat, and more healthy than packaged desserts. Hope you enjoy!

lime coconut banana bread

2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe banana (about 3 bananas)
1/4 cup plain low-fat yogurt
3 tablespoons dark rum (or apple juice)
1/2 teaspoon vanilla extract
1/2 cup flaked sweetened coconut
Cooking spray
1 tablespoon flaked sweetened coconut
1/2 cup powdered sugar
1 1/2 tablespoons fresh lime or lemon juice

Preheat oven to 350°.
Lightly spoon the flour into dry measuring cups, and level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk to combine.

Place granulated sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, rum, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Stir in 1/2 cup coconut. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle with 1 tablespoon coconut. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Combine powdered sugar and juice, stirring with a whisk; drizzle over warm bread. Cool bread completely on wire rack

Here is one of my favorites and you can do it 2 ways.

1 box Angel Food cake mix...follow directions on box make the cake.

Strawberry Pie Filling
1 cup water
6 tsp cornstarch
1 cup sugar
1/2 pkg (3 oz) wild strawberry or strawberry jello
1 1/2-2 pints fresh strawberries

In a saucepan, cook the sugar, water and cornstarch until thick. Add 1/2 pkg jello. Let cool. When cool, fold in sliced fresh strawberries. Has to be kept refrigerated.

1 tub cool whip, not frozen

Once everything is done here are the 2 ways to serve it.

If you want to make it look like you have slaved in the kitchen and preparred this wanderful dessert...

If you have a tall hurricane candle holder vase at least 12 inches tall, slice the cake in 1 inch slices. Start with the cake and layer the bottom of hurricane with a layer of cake, then strawberry filling, then cool whip. Repeat all the way to the top. Cover top with foil and keep in fridge. Will look like a peppermint swirl or candy cane. This is my trade mark at Christmas!

Or the easy way.

Slice the cake and serve garnished with strawberry filling and top with cool whip.

Trust me, either way is easy. I have 2 small kids and this is what I serve 9 times out of 10 when doing desserts not to mention it is YUMMY!!!

Sopapilla Cheesecake
2 cans of crescent rolls
16 oz of cream cheese (I use the whipped)
1 cup sugar
1 tsp. vanilla
1 stick of butter (not margarine)
1/2 cup sugar mixed with 1 tbsp. cinnamon

Preheat oven to 350. Grease a 9 x 13 pan. Layer one can of the crescent rolls on the bottom. Pinch the seams together. Mix the cream cheese, 1 cup sugar and the vanilla together until creamy. Layer on top of the crescent layer. Place the other can of crescent rolls across the top of the cream cheese layer, pinching seams together. Melt the butter and pour/spread across top. Sprinkle entire cinnamon/sugar mixture on top. Bake for 30-35 minutes.

This can be served warm, but tastes better chilled. Chill for about 3 hours before serving.

My favorite dessert that makes a lot but doesn't last....

Double Chocolate Mocha Trifle.

1 box brownies that makes a 13X9 pan plus ingreadients to make brownies

1 8oz cool whip

2 boxes white chocolate pudding mix

1/4 cup STRONG coffee

1 3/4 cup milk

1 bag of Heath bar pieces (or 4 Heath candy bars chopped coarsely)

Make brownies as directed, cool and cut into 1 inch squares
Mix milk, coffee and pudding mixes until starting to firm, fold in Coll Whip.

In a Trifle bowl or LARGE salad bowl mix 1/3 brownies, 1/3 pudding mix, 1/3 Heath bar crumbles. Repeat layers 2 more times (total of 3 layers). Refrigerate at least 2 hours before serving.

Enjoy!

Strawberry Cake (has been a hit everywhere I take it)

Strawberry Cake mix
2 - 10 oz pkg of frozen strawberries - thawed
1 box of vanilla instant pudding (I use French vanilla)
1 reg (16oz) tub of Cool Whip

Prepare cake mix as directed
Puree strawberries with juice in blender or food processor (I like to leave mine a little chunky)
While cake is still warm, poke holes in cake and pour strawberries over top of cake. Place in refrigerator and allow to cool.

After cake is cool: Prepare pudding mix as directed except use ONE cup of milk instead of two. Fold in Cool Whip (this also works well as a fruit dip). Place on cake and put cake back in refrigerator until frosting is cool. I usually make it look pretty with fresh strawberries as a garnish. This cake tastes better the longer it's cooled, so I usually make it the evening before I serve it.

1-Graham cracker crust pie shell
1-Big container of vanilla yogurt (I think it is like a 1/2 gallon or something like that)
--Different kinds of berries--Container of strawberries, blueberries, raspberries etc..

Pour and spread yogurt into pie shell, evenly
Spread berries on top.

Fast and easy.

You can do the same thing w/the pie shell, chocolate pudding and crushed Oreos.
